Roasted Banana Icecream

Roasted Banana Icecream:
Number of People:
Ingredients:
3 medium bananas
70g dark brown sugar
1 tablespoon butter cut into small pieces
375ml cream
2 tablespoons sugar
½ teaspoon vanilla extract
1½ teaspoons fresh lemon juice
1/4 teaspoon salt


Preparation:
Set oven to 2000C.
Slice the bananas into 2cm pieces and toss them with the butter and brown sugar.
Bake for 40 minutes, stirring once.
Scrape the bananas and syrup into the bowl, add the cream, sugar, vanilla, lemon juice and salt. Puree on speed 8 or 9 about 1 minute.
Chill the mixture and then use your icecream maker.

Tips/Hints:
This doesn't make a large amount but it is really tasty. I have based this recipe on one from 'The Perfect Scoop.'

Interesting recipe, I have a lot of frozen banana in the freezer,  do you think it would work if I thawed some out and made this ? Guess I should give it a try.

AB two of the bananas I used had been frozen, the small fridge had been turned up accidentally and they froze. I think they caramelised better than the unfrozen one.
May all dairy items in your fridge be of questionable vintage.
