Introduce Yourself / Back again

Afternoon everyone.  Am a long standing member of this group but not posted in a very long while so I thought it prudent to reintroduce myself

I'm Nicola, mum to three boys (and married to a fourth ;)  I've had a Thermomix for around 8 years now and was an active demonstrator when the TM5 was launched so managed to earn that.  I no longer operate as a demonstrator but am still a committed TM user (I'd buy a second if I could).  Right now I'm waiting for DHL to deliver  the new Taste of India recipe chip and book.

I can't wait to try out those recipes.


P.S.  My username is derived from my children's names - William Isaac and Noah!  Its not from some uber competitive spirit I have

I'd never made a souffle before - they're so scary but these were a snap to make, very easy and very delicious.  They were also quite salty and very rich.  

I can see them being very good for DS1 who is approaching his teen years.  As mentioned before (I hope I don't bore you with it all) he's autistic and ADHD.  His eating is very erratic so if he decides he's going to be spending the evening eating through the cupboards I want it to be high calorie, high protein, high fat rather than a b**ody sandwich or some cereal.  Can you store souffle mixture - I can't see the whole family enjoying them but that's more an indictment on their fussiness than the recipe.

Sorry, I feel like I'm spamming the forum tonight with my recipe reviews but I have been a very busy chick with my TM5.

This is a lovely mix of raw beetroot, carrots etc.  Absolutely delicious and ready in almost an instant.

I'm ashamed to say this was my first introduction to Thermomix chopped salads and at a customers house during a demonstration too.

I loved it (although I'm alone in the house on eating salads) and although I can't eat raw broccoli usually - I have no problem with this.  I really need to up my vegetable intake and eat more healthily generally and this little baby helps a lot.

I am utterly adoring my TM5

Introduce Yourself / Re Introduction Nicola

Hi all

I used to be quite active here a couple of years ago but then fell of the radar.  I trained as a consultant 15 months ago, peeked in and then fell off the radar again.

Life(tm) has been unreasonably hectic over the last year or so.  DS1 was diagnosed with autism around November 2012 and DS2 was diagnosed Feb 2013.  The last year has been spent getting DS1 a statement of SEN and into the appropriate school setting because he wasn't coping where he was.  He's now moved to a special school for his secondary education and is loving it.

So with all that out of the way its time to refind my cooking mojo and get my Thermomix business thriving.  I've been building up to posting for a couple of weeks trying lots of new things and tonight posted a quick recipe review.  Its so rare that I cook something new and not only do all the boys try it but they actually really liked it!

Looking forward to being an active member again.

Introduce Yourself / May I re-introduce myself?

Hi there, I've been a member of this forum for a couple of years and was once reasonably active ;)  Life (tm) got in the way and I've been absent for a while so I thought I would re-introduce myself, especially as last month I did my demonstrator training and am now part of the UK team of Thermomix Demonstrators.

So, here goes - I'm Nicola, married with 3 boys (10, 8 next week and 4), we live in the South of England.  Boy1 has Aspergers and ADHD, boy2 is being assessed for Aspergers and also has ADHD boy 3 seems to be "normal"

I love and adore my Thermomix (like us all) as well as this mornings demonstration I've also cooked carrot cake, chocolate chip cookies and a risotto for tea tonight.  Yet to be done tonight is a mixed berry sorbet and a rhubarb compote

Even tho' I've held only 2 demonstrations and am yet to sell one I love my job :)

I hope to be around a bit more now swapping ideas, recipes and tips.

Chit Chat / Pie Maker

Wow, my pie maker is here!  What a combination a Thermomix and a pie maker?  Shortcrust pastry takes 20 seconds in the TMX!

I've already made 8 pies with the leftovers of the beef strogonoff the from the other night!.  They'll now get frozen and used for lunches or snacks either for the boys or when we go away in the caravan - easy peasy grab a pie for a snack or for lunch.

I'm seriously impressed and the possibilities are endless - quiche, pizza pies, custard tarts .....


P.S.  What I like best is the ability to use leftovers, I HATE leftovers

Well I've been away from the forum for a very long time .....  I do sneak on here sometimes from my ipad when I need to know something (how naughty is THAT?) but since I can't remember my password and only my laptop remembers it I haven't contributed much.

WELL, had a good old read this afternoon, which I should have KNOWN would cost me money and after reading the thread started in August on vacuum sealers I've now gone and ordered one .....

It WILL save me money, and it WILL stop the waste ...

I shall need to hide it from dh (and I SWORE I would never be one of those women) until you people can come up with full justification for him ....

Perhaps a recipe for some really good marinade will convince him  :D

Hello, I feel a bit guilty jumping in with a request since I've been absent from here for so long ... :-[

Life (tm) has got in the way what with our move and new schools and spending time on my other love (sewing ...)  If I promise to be a bit more active in the future (I'm doing demonstrator training after the New Year?) could someone point me in the direction of a Thermomix recipe for Beef Strognoff?

Please, please, pleeeeease

I understand there's one int he EDC but I'm in the UK and have the Fast and Easy Cookbook

They have 5 Thermomix for sale at a price that is more than can be purchased legitimately, are charging 89 for delivery that takes the best part of forever!  And from what I can tell are offering no guarantee ....

Chit Chat / Woohoo - Got Thermie in the Caravan

I've achieved my aim every since I bought my Thermomix - I know some people don't like to take it with them on holiday but I can't bear going away and eating poor quality, bland tasting food so I've finally persuaded dh to let me bring thermie with me.  His argument started off with the power - the electric hook up wouldn't be powerful enough, then it was the weight!, then it was the space in the car/'van while we travelled.  We got all packed up today and there was plenty of room in the boot so I suggested we just chucked it in the boot.  So that's it - proper food all week.  I'm even going to buy some little packets of bread mix so that we can eat real(ish) bread while we're here - I've completely lost my taste for supermarket bread.

I'll let you know how we get on :)

Hi all

Been out of the game for a while as we have been moving.  We are now safely ensconsed in our new home although have masses of unpacking to do!  We made the move as dh has been working away for the past 2 1/2 years - only coming home at weekends.  We're now only half an hours drive from his work so he can come home every night.  This does mean I have one more to cook for!  He loves TMX curries (the TMX vindaloo is apparently the best curry he's ever had ....) but the children don't so its not something we can have every night!

Looking forward to getting my kitchen fully sorted and cooking up a storm :)

Oh and looking forward to contributing a bit more here!  ;D


Recipe Requests / Vindaloo Recipe Request??

We are moving next week (ARGH) and have some friends coming this weekend to help us sort out the garage (yes its that bad) and I've promised them my famous TMX vindaloo.  Only I can't find my TMX Indian Cookbook.  If anyone has this and wouldn't mind sending me the recipe I'd be really grateful.  If it needs the Tikka paste I'll need the recipe for that too .......  :-))

I'm very, very grateful and when we've got settled I promise I'll be much more active on the forum again xxxxx

Main Dishes / Peanut Chicken

Peanut Chicken:
Serves 4:
750g boneless, skinless chicken, cut in chunks - I used thigh
1/2 cup natural peanut butter (creamy or chunky, your choice)
1 red bell pepper, seeded and sliced
1 large onion
1 tablespoon ground cumin
1 lime, juiced
1/4 cup soy sauce give or take - I think I used 1/2 a cup and it was great but I did it slowly because I was worried about over doing it
1/2 cup chicken stock - I didn't have any so didn't bother


coarsely chop the onion in the  *: add rest of the ingredients and then cook on 90, reverse  ^^ speed for around 20 minutes, it really was that easy!



I think that the chicken could do with marinating in the sauce for an hour or two - it would really give it a depth of flavour but it was really nice without that step.  My incredibly fussy children - 2 out of 3 ate it with no comments (that's gotta be good) the 3rd had just raided his school lunch box so wasn't particularly hungry.  Grown ups might appreciate the addition of some chilli somewhere, it might be nice to play with a bit of garlic too

I got this recipe from a slow cooking blog - my slow cooker is packed away so I decided to try it in the TMX

JD - This is a really lovely, simple dish Nik - it takes longer to defat the thigh fillets than it does to cook the whole meal. I only had 430g thighs so adjusted the quantities of everything else accordingly.  I took your suggestion onboard and added 1/4 tspn chilli paste. I also thickened it with 2 tsp cornflour mixed with a little water at the end of the cooking time, placed it in the thermosaver whilst I steamed some rice and vegies.  Had enough chicken and sauce leftover from 2 serves to add all the excess vegies for another meal tomorrow with rice.  This is something I would certainly serve to visitors.  I didn't marinate the meat beforehand, just got straight into it and it is delicious.  Thank you for such a simple recipe. 5/5 from us.

hjacobsen - had no chicken or peanut butter so used prawns which needed less cooking time than chicken. Made peanut butter with  macadamias and almonds which added to the texture very nicely.  The sauce was a bit runny and there was too much of it so I saved some for the freezer.  It will make a great base for another seafood dish. I served it on rice and took the cue from here to have wilted chinese vegies, fresh from our asian market this morning. Thumbs up from all of us.  A fabulous meal, no fuss, no mess, just compliments that I didn't really deserve. I really look forward to trying it with the chicken!

johnro - it was a hit - cut cumin to 1 teasp added some chilli and garlic, thickened with cornflour and served with steamed vegies and rice.  So very quick and delicious - thank you for posting.

Katya - it was a great success.  I marinated the chicken with all the ingredients plus some chilli, garlic and ginger.   I probably used less soy sauce and less peanut butter (trying to be healthy) but it still tasted really good and it's certainly something I'll do again. Thanks for posting it.

Lellyj - This was delicious and so easy as promised.  Will become a regular in our house. I thickened the sauce as Judydawn suggested and didn't add chicken stock either. Next time, rather than cumin, I might use some red curry paste in the beginning and then coconut milk rather than soy and finish off with some fish sauce, lime and palm sugar to give it a Thai flavour, instead.  Feel a bit inspired! Thanks for sharing!

cookie - really enjoyed it. I did make a couple of modifications. I added chilli and 1 clove garlic to the sauce. I did the sauce early and marinated the chicken in it (in the fridge ) for a few hours. I then cooked the chicken in pieces in a non stick frypan and added the sauce to cook through. DH had the leftovers as pies (in the pie maker).

Jen 71 - OOPS! I misread the instructions and accidentally set the Thermie to  counterclock Speed 4 for just a few seconds. I've ended up with minced chicken. It's still pretty tasty.

Amy - really enjoyed it, added it to the "make-again" list. It's a lot like a satay chicken recipe I used to make on the stove but so much easier! Thanks so much for this recipe.
I made it again with a couple of major tweaks and it turned out beautifully. I just whizzed all the ingredients for the sauce in the TMX and put it in a big bowl with about 650g chicken tenderloins. I left them to marinate for an hour and then poured the whole lot into a lined baking dish and cooked them in the oven. I will definitely do it this way from now on, the chicken is so tender and it stays exactly how you want it. I think I would add more stock to the sauce though, I would have liked a bit more to soak into the rice.

mcmich - followed the recipe exactly. Very yummy. Like Amy I would double the sauce quantity next time. Loved the flavour of the sauce.

inskiwinski - It was so simple to make but was totally delicious, was gobbled up quickly at my house!

JuliaC83 - Yum! Realised I had no soy sauce as I was prepping but went ahead anyway. Added diced carrot and celery for extra veg and served alongside steamed silverbeet and broccoli as well as a mix of brown rice/wild rice/quinoa/chia.

chickie - so easy to make. I served it with steamed vegies and vermicelli noodles. I found mine to be quite saucy as I added the chicken stock. DH and I agree that next time we would both prefer it with more chicken. Thanks for posting such an easy yummy meal!

Kmmyh - it was delicious. Like cookie, I whizzed up all the sauce ingredients plus some garlic, chilli and ginger, and marinated the chicken (I used breast) for a few hours. I then stir fried onion, carrot and capsicum in frypan before adding chicken and sauce. Thanks for recipe, will be making this again.

Aimezly - easy and delish!!  Two thumbs up!  Thanks for the recipe!

Chookie - Made a variation of this for lunch today.  Added mushrooms, garlic and peas. Served with pasta.  Loved it.  

foodgroupie - I didn't think there was going to be enough sauce so I added another 1 and a half cups of water at the start of the cooking process, had to add cornflour at the end to thicken the sauce, wife loved it, 19 month old daughter loved the sauce with rice,,, happy days.

Tony 101 - Easy to do, and very tasty. The only problem was that the chicken was shredded at the end, despite speed 1 on reverse.
Its always nice to have chicken that looks like chicken.

JD - Tony, some people cook meat with the butterfly in place to prevent shredding but I find if your chunks are chunky and you use a very low speed on reverse, it isn't necessary.

Cookie - Tenina has mentioned that when using chicken breasts just pop them in for the last 6-7 minutes. They will cook but not break up.
