I didnít enjoy the roasted veggies/potato casserole so Iíve turned it into soup with the addition of liquid chicken stock and some neutral sustagen powder.  Much easier for me to eat and more enjoyable.  I also added some cooked chicken from the freezer to add a bit more protein before blitzing it.

It sounds and looks really nice cookie, was the asparagus soft or crisp?  I reckon I could do this and also use some of the other veggies suggested.  Did you cook it in the a/f or oven? I find the a/f cooks much quicker than the oven so wondering if 10 mins would be too much in there.

So much to do after the loss of our loved ones K Atie, your job is almost done. Good luck with holding up for tomorrowís funeral, these days theyíre usually a celebration of the personís life and Iím sure your DM had a great life.

I slept in until 9.28am this morning so after a quick shower and a glass of Sustagen I was only 5 minutes late for my 10 am gym class.  For the first time in my life I had to leave the bed unmade.

Thanks Chookie. We do have to take advantage of fine weather at this time of the year, no matter what our plans are for the day the weather will have the last say.

Good idea Chookie, everyone knows someone with Diabetes.
I have todays meals from the freezer but as it was so cold this morning I decided to do some cooking in the oven - veggie dishes for the rest of the week, I soon warmed up.  My favourite potato casserole recipe from the first AWW Dinner Party cookbook, Roasted sweet potato & carrots  https://www.spendwithpennies.com/roasted-sweet-potatoes-and-carrots/ and zucchini & pumpkin.

Never heard of them so googled it Margaret - unless youíre a squirrel theyíre inedible but thanks for your posting, Iíve learnt something today.

Yes I agree with Margaret, an interesting combination.  If you stopped at one, 1 little muffin is not going to undo all the good you do with your diet cookie.

Even if you only get one brilliant recipe out of a recipe book or magazine itís worth the cost cookie.

So sorry for your loss K Atie, our Mums are so precious. May the dear soul Rest In Peace, it must have been so comforting for her knowing you were with her until the end.  Iíve found nursing staff are brilliant with their palliative care whether that be at home or in a nursing home, they are a very important part of our loved ones final days.
