Title: Pumpkin Fruit Cake

Put 500g mixed fruit
125g butter
150g rapadura sugar (or any sugar)
250 water
into bowl for 10 min  :-: speed  ^^ at 100oC

Let cool to about 70oC and Pour into 'big' mixing bowl
add 1 tsp bicarb (foams up)
and then add 200g cooled cooked pumpkin and
50g golden syrup (or molasses for darker fruit cake)
1 tsp mixed spice
1/2 tsp cinnamon - Stir gently.

Make sure mix is cooled right down and fold in
250g flour + 2 tsp baking powder (or use SR flour)
Pour into square tin and cook at 180oC for 1 hour.  :)
This is the cake I bake when there are no eggs.

Uni - Just out of the oven it smells soooooooo good. Lucky I am not a fan of fruit cake, will have too wait for DH to give me thumbs up or down, I am sure it will be up. I used sweet potatoes and walnuts in mine. Thanks Nay-nay. My mix was all so very, very dry when mixing it and did not rise at all but DH gave it 2 thumbs up.

Nay-nay - it doesn't really rise that much.

MJ -  I used brown sugar as I don't have rapadura. I also swapped out 150g water for 150g sherry and added 2 eggs. My cake rose really well. I cooked it a little slower (170C FF) and longer 1 hr 10 mins)  and lined my tin with two layers of brown paper, like I always do for fruit cakes.

Yes - Molasses makes it look really rich.  :)

No eggs? I hope that's correct! It's cooling down, so I might wait for a reply before I add the flour... :P

No Eggs - No 'R'!!! Haha - I think I asked my mother-in-law the same question when she gave me the recipe. It works - I promise.  ;)

Yes the original recipe just called for sugar - the sherry sounds interesting - let us know how it went.  ;)

Mmm, walnuts would be a nice addition.

Nay, I got the message from you about no eggs, but I did put some in - not because I didn't believe you, I promise!
It's because I left the fruit mixture in the fridge overnight and the fruit had absorbed all the moisture so that when I mixed in the flour it was very, very dry. I added two beaten eggs. Next time, I'll make it as per the recipe.

The mixture tasted divine - sherry really adds flavour.

Maybe the eggs made the difference fundj.

I haven't cut it yet, but it looks lovely. You can see the EDC Best Coconut Cake on the rack too.

Well that must be disappointing. Mine has never been dry and it doesn't really rise that much.

I really love the one I made, very moist and delicious. I'll try it without eggs next time as it's good to have cake recipes that don't require them - especially when making cakes on a long weekend with no shops open!

I post recipes and then throw out the original with all the scribble on. Weeks/months/days later I get into a flap because I can't find it. I always forget to print my own converted recipes out. Drrrr :P :P

I have a pkt of potato flour and a pkt of wheat germ in the pantry just sit there one day i will remember why i bought them. any ideas what i could use the wheat germ for? Can i add it to a bread dough?

Cookie that seems to be a common ailment - I have to revert to the forum post as I have forgotten to save or print the convert4ed recipe - happened on Friday with potato chip cookies  :)  :)

Thanks for a lovely recipe........ I used 50gms of rapadura and 50gms of raw. I'm going to try eliminating all the raw next time as I think it would still be sweet enough.  It's a really lovely moist cake. ;D

Caroline, have you seen paperfreak's postings of cookbook contents and ingredients in the childboard "Cookbook Contents"? under Recipe Book Recipe Reviews.
This is the very reason she is making these lists, type in your ingredient(s) and recipes containing them will be highlighted in yellow. I checked all the books she has done so far and the only recipe I have found using potato flour is Sue's Famous Chocolate Cake on page 75 of GF cooking. You must put "potato flour" for the search to work properly as she explains in the preface to her lists.  This is the first time I have used the list but it was a great exercise in how it does work so if anyone has an ingredient in their pantry and wonders why they bought it, I suggest you check out these lists to see if you can come up with the answer.  The work involved in these lists is a credit to paperfreak and if you use any of these books frequently, it has to be a very useful list.
For recipes on the forum, all you do is go to the home page, type in "potato flour" and recipes will come up with these words highlighted.

Just made this cake again today. I wondered why I had written '2 beaten eggs' underneath. Now I know, it's because I wasn't sure last time.
I should have checked here first and could have saved using a couple of eggs. Never mind...
