I got my milk loaf recipe from a blog, it looks as though they are probably the same one. https://www.chopstickchronicles.com/shokupan-japanese-fluffy-white-bread/
This is the recipe that I used.

I started a recipe for baguettes this morning. The dough was mixed, allowed to stand, ;then 4 stretch and folds and now it is in the fridge until tomorrow.

Cookie, I have simplified the recipe for TMX.  I have also increased it by 1/3.  Will post recipe after tomorrow when I have tested this version.  The closest commercial bead to this is Bakers Delight Hi Fibre.
We enjoyed this as a change from the seed breads that I usually make.  It is nice toasted, makes great sandwiches and I suspect very good toasties.  Also Prawn Toasts when a few days old.
I have also made the Chinese version but like this better.
Today made Pizzas for lunch.  Made 2 extra for lunch tomorrow.  They reheat very well in AF.

Chookie I'm looking forward to seeing your variation on the Milk Loaf.  I had downloaded the King Arthur recipe some time ago and never got around to making it.

Today I have made another Date & Nut loaf and a batch of Worcestershire Sauce.  Also grated up a block of cheese and some bread crumbs from some left over bread.
The  man who said it can't be done should not interupt the woman doing it.

Mab you have been very busy. I cooked my SD baguettes this morning. I had trouble slashing them as I found it hard to tighten the sough surface of a sausage shape. I am very pleased with them though, and they have a very hard crust so DH is happy. A friend was round when i took them out of the oven, so I sent him home with one. I got the recipe from as Facebook site. I will try to link it when I go back to the ipad.

The recipe is from Sourdough Baking Australia. It’s a Facebook site and the recipe can be found in the files section. I don’t know if I am permitted to share it.

Cookie, they look good. I use that SD site for inspiration. to stretch the dough for the bread sticks I just pull and pinch underneath.
I made 3 large bread sticks as GD is 18 this Sunday and has ordered garlic bread and Lemon Feather Cake. Also making dips.  Can’t have a party so just small family BBQ. She will have a celebration when possible.

Made the Japanese Milk bread. Posted on my Blog.  Also made some bread sticks and rolls from same recipe.  Reheated some rolls for lunch and they went nice and crispy but still soft inside.

I made a fruit loaf today. I patted the dough out into a rectangle and put apple and sultanas over it. I rolled it up like a sausage and coiled it up. I let it rise a bit much, so it was enormous.

Made sushi rolls.   Haven’t made them for years. Disappeared quickly at GD family Birthday dinner.  Garlic bread made with Japanese Milk Bread stick, also popular. Reheated in AF.
