Reading this thread has brought back so many happy memories for me as a few years ago DH and I spent 8 weeks in France (Paris, the Loire Valley and the South of France) immersing ourselves in the language, culture and food and had an absolutely wonderful time. The trip before that, we spent a couple of weeks in Paris and Chamomix during the ski season. I can highly recommend an extended stay in France. Am green with envy Frozzie. Hope the weather stays good for you.

Yes Judy, we do like our food with flavour. They were the large red chillies though, not birds eye ones so not as hot. Great recipe so thanks very much for posting.

Hi CreamPuff63, how long did you cook the pie for using the puff pastry top instead of mashed potatoes? Recipe sounds delicious and I would like to make it this weekend.

As I don't have a Thermoserver yet, would this work without one? The idea of freeing up the TMX bowl, of which I only have one, is very appealing.

I made this dish a few nights ago and my DH loved it. I tweaked the recipe a little...used three whole chillies with seeds intact (we like spicy foods), replaced basil with Thai Basil, added a bit of mint because I had some, also added the cornflour at the end of cooking as suggested by Judy to thicken the sauce. A very aromatic/fragrant dish. Definitely a restaurant quality dish and will definitely be making it again.

Thanks for the advice, consider it sold :-)

I'll order it tonight. I'm not very good at waiting for parcels to arrive so wish I could get it from a local bookshop. A few days after ordering Tenina's book, I saw it for sale at the local bookstore where I do my grocery shopping all the time. Hence, had I known, I could have saved myself the postage cost. Oh well.

Publishing a forum book is a really good idea. My local primary school (Mt Hawthorn Primary School) put together and published a cookbook with recipes provided by the staff and families etc. It's very professional and I saw it a the local library. Not sure if they made any money from it but it's very professional, beautifully photographed and would make anyone feel proud if you were part of its production. Hence, maybe that's something you could or should look into CP?
