Title: Thermomix International and Translation

Here's a suggestion that might take a bit of investment to start with, but could simplify the life of everyone here in the long run. Since we have members from all around the world, we have access to cookbooks in several different languages. For example, the basic Thermomix book is available in French, English UK version, English Australian version, German, Italian, Spanish and I'm probably missing some. From what I could figure out, not all versions have the same recipes, and it would be great to know what's available in other books. For example, maybe there's a recipe in the German book that I would love to make, but I'll never know it even existed because I can't read German to save my life. So here's what I'm proposing:

How about we take all the books that we have, and we translate the index in English and post it here? Then this thread can become a reference for recipe ideas, and we can ask for translations of specific recipes as needed.

Translating the index can be a lenghty process, so if you're up to it, I suggest you mention it here so we don't have two people working on the same book. You guys in English speaking countries might be able to find book indexes already typed out on the Net.

What do you think?

That's a brilliant idea :D I find it totally frustrating that I cannot speak Italian or Spanish because there are some really interesting recipes (and videos) out there on the web that I would love to try but can't due to language problems.

I can help to translate the index of the German TM book if that helps.

That would be awsome, vivacity!

I'm almost done with the French book. I typed the recipe list in Word, in the original language, and then I copy/pasted those in Google translation (http://translate.google.com/translate_t#). That tool is pretty handy: for about half the recipes it returned the exact translated term, rather than a literal translation. I actually learned lots from it... I had no idea that custard was crème anglaise in French!! I'll add a few comments to clarify the more obscure recipes and I'll post.

Fillet mignon with mustard
Chicken whites (?) in tomato sauce with mushrooms.
Quail (I'd use chicken) with grapes and sweet wine
Chicken stew
Chicken with peppers, tomato and white wine
Rolls of chicken whites in ham dress (?) and sauce chasseir
And from the vegie section - zucchini gratin provencal.

I think beurre blanc may be mistranslated - it is a butter sauce made with wine and shallots rather than just "white butter"

Far Breton is a superb dessert - have a recipe from a Philippe Mouchel cooking class at home.  It is a bit like clafouti - yummo..

Oh Melissa...they all sound great! I would quite like the book! Is it in English? Can you buy it easily there? Some books in Spain, can't be bought, you have to win them!

sjharrop - below is the Salmon Fillet with Mushroom Sauce (Will also post in the correct category)

Servings: 6-8
Prep Time: 15 minutes
Cook time: 34 min.
Ingredients:

Salmon
- 700g skinless salmon fillets
- 2 tbsp butter, divided
- 1 lemon ,divided
- salt & pepper to taste
- 240g fresh mushrooms, cleaned and trimmed
- 480g water

Sauce
- 1 shallot, peeled
- 60g dry white wine
- 120g whipping cream
- 120g cream cheese
- dash of ground nutmeg

Garnish
- Chopped Parsley

Cut salmon into 8 equal pieces

Using 1 tablespoon butter, spread a piece of aluminum foil large enough to enclose salmon. Place salmon on foil. Squeeze half of the lemon over salmon pieces and season with salt & pepper (slice other half for garnish) Carefully seal salmon inside foil.

Place prepared salmon in upper Varoma tray. Place mushrooms in lower varoma tray. Pour water into bowl. Properly install Varoma trays. Cook for 15 minutes at Varoma Temperature on speed 1. Carefully turn salmon packet over and cook another 15 minutes at Varoma temperature on speed 1.

Remove Varoma trays . Empty liquid from the bowl. Leave salmon in foil to keep warm while making sauce.

With the blades running for 10 seconds at speed 6, drop shallot into the bowl through the opening in the lid.

Add remaining butter and cook for 1 minute at 90degrees on speed 1.

Add remaining ingredients and half of mushrooms. Heat for 3 minutes on 100degrees on speed 2.

Serve salmon with sauce. Garnish with remaining mushrooms, lemon slices and chopped parsley.

brazen20au - Below are the salsa & spinach dip:

SALSA

Yield: 2 cups
Prep time: 10 minutes
 
- 1/2 Cup cilantro, leaves, rinsed
- 90g onion
- 1 tsp salt
- 350g fresh tomatoes
- 2 seeded Japanese peppers
- 60g tomato paste
- juice of lines
- 30g scallion

Place all ingredients into the bowl. Mix for 5 seconds on Turbo for chunky salsa, 10 seconds for smooth. If you like really chunky, use a slower speed and experiment with the time until you get the consistency you want.

SPINACH DIP


Yield: 3 cups
Prep time: 15 minutes
Cook time: 10 minutes
Chill time: 1 hour

- 60g onions
- 1 shallot
- 1 clove garlic
- 300g rinsed spinach, stems removed
- 480g low-fat cream cheese, divided
- 1/2 tsp Tabasco
- 1tsp Worcesershire sauce
- juice of 1 lemon

With the blades running for 10 seconds on speed 7, drop onion, shallot and garlic clove into the bowl.

Place the basket in the bowl. Pack spinach into the basket. Carefully lock the lid.

Cook for 10 minutes at 100degrees on speed 1. After cooking, remove the basket.

Add spinach and 250g of cream cheese to the bowl. Mix 40 seconds on speed 5. Scrape down the sides of the bowl using the spatula.

Add remaining cream cheese and remaining ingredients into the bowl. Mix for 30 seconds on speed 5.

Pour into a serving dish and chill in refrigerator until ready to serve. Serve with crackers, bread or toasted pita.

brazen20au - here's the German Potato Soup (will also post in soups)

German Potato Soup
This is a thick and hearty potato soup flavored with rich chicken broth (preferably homemade) and just a bit of celery root. Garnish with fresh crumbled bacon and croutons. Follow with bratwurst and an apple strudel for a complete, authentic German meal.

Servings: 6
Prep Time: 10 min.
Cook Time: 40 min.

Ingredients:
•   2 large (about 480g) baking potatoes, peeled and cut into 2.5 cm pieces
•   1 leek, white section cut into 2.5 cm pieces
•   2 sprigs parsley
•   60g celery root, peeled and cut into small cubes
•   1 tsp. salt
•   pepper, to taste
•   600g chicken broth
•   1 cube chicken bouillon
•   200g half & half
•   2 sprigs parsley
•   fresh chives, to taste
Garnish
•   crumbled bacon and croutons

Instructions: Place vegetables, salt, pepper, broth, and bouillon cube into the Bowl. Cook for 15 minutes at 100°C on speed 1, reducing heat to 90°C, if steam appears from the top. Add half & half to the Bowl. Cook for 25 minutes at 90°C on speed 1. Add parsley and chives. Mix for 10 seconds, gradually increasing to speed 6. Pour into serving dish and garnish. Serve hot.
Note: The soup may also be flavored with marjoram or nutmeg.

Ingredients:
•   60g dry vermouth
•   90g light cream
•   60g onion, quartered
•   1 clove garlic
•   2 tsp. Dijon mustard, with seeds
•   1 tsp. hot mustard
•   1 cube chicken bouillon
•   l/2tsp, salt
•   1/8tsp. pepper
•   120g fresh mushrooms, cleaned and sliced
•   450g pork tenderloin, thinly sliced
•   2 tbsp. sour cream
•   1 tbsp. cornstarch
Garnish
•   fresh parsley

Instructions:
Place vermouth, cream, onion, garlic, Dijon mustard, hot mustard, bouillon cube, salt, and pepper
into the Bowl. Insert the Basket into the Bowl. Alternate layers of mushrooms and pork in the Basket. Cook for 20 minutes at 100°C on speed 5. If boiling too rapidly, turn heat down slightly. Remove the Basket and empty mushrooms and pork into a serving dish and keep warm. Add sour cream and cornstarch to sauce already in the Bowl. Cook for 3 minutes at 70°C on speed 4. Pour mustard sauce over mushrooms and pork. Serve over very hot steamed rice or noodles.
Garnish with finely chopped, fresh parsley.

Ingredients:
Chicken
•   400g water
•   4 slices fresh ginger, 0.6 cm thick
•   30g Scotch whiskey
•   350g skinless boneless chicken breast, cut into pieces
Sauce
•   1 clove garlic
•   2 scallions
•   1 piece ginger root (size of garlic clove)
•   2 tbsp. soy sauce
•   1 tbsp. unseasoned rice wine vinegar
•   2tsp. sugar
•   1 tsp. Asian chili oil
•   1/4 tsp. Asian sesame oil
Garnish
•   fresh chopped cilantro, as garnish

Instructions:
Place water, ginger, and Scotch into the Bowl. Place chicken in the Basket. Place the Basket into
the Bowl. Cook for 20 minutes at 100°C on speed 4. Place chicken in a serving dish, and cover.
Clean the Bowl. With the Blades running for 10 seconds on speed 7, drop garlic clove, scallions,
and ginger into the Bowl through the opening in the Lid. Scrape down sides of the Bowl using the
Spatula. Add remaining Sauce ingredients to the Bowl. Mix for 15 seconds on speed 2.
Shred chicken with a fork, or slice it. Pour sauce over chicken, and toss. Serve at room temperature garnished with chopped, fresh cilantro.

Instructions:
Layer vegetables in the lower Varoma tray. Combine prepared turkey with sesame oil, sesame seeds, and cashews and place in the upper Varoma tray. Pour water into the Bowl. Properly install the Varoma trays. Cook for 25 minutes at Varoma temperature on speed 1. After cooking, remove the Varoma trays and make sauce. Retain 250g of cooking liquid in the Bowl. Attach the Butterfly to the Blades. Dissolve cornstarch in sherry and soy sauce. Pour into the Bowl. Cook for 2 minutes at 100°C on
speed 2, or until thickened. Mix turkey, vegetables, and sauce in a serving dish. Serve with rice.

•   1 green bell pepper, cut into rings
•   1 yellow bell pepper, cut into rings
Rice
•   1 small onion
•   1 glove garlic
•   60g butter

•   600g beef bouillon
•   300g water
•   200g converted white rice
•   150g fresh, sliced mushrooms
•   2 tbsp. parsley
Sauce
•   3 tbsp. cornstarch
Topping
•   90g Parmesan cheese

Instructions:
Place onion and garlic into the Bowl. Mix for 5 seconds on speed 4. Add ground beef, bread crumbs, steak sauce, egg, salt and pepper to the Bowl. Mix for 20 seconds on speed 4. Scrape down the sides of the Bowl, using the Spatula, if needed, and mix a little longer. Shape into 2.5cm balls. Place meatballs in lightly oiled lower Varoma tray. Place peppers on top of meatballs. Set aside while preparing rice. Place onion, garlic, and butter into the Bowl. Cook for 3 minutes at 100°C on speed 4. Add .salt and pepper, bouillon, and water to the Bowl. Place the Basket into the Bowl. Add rice, mushrooms, and parsley to the Basket. Properly install the Varoma tray. Cook for 25 minutes at Varoma temperature on speed 4. Remove the Varoma tray and the Basket, leaving liquid in the Bowl. Gradually add cornstarch to the Bowl. Cook for I minute at 100°C on speed 4. Place rice, meatballs, and peppers in middle of serving platter. Pour sauce on top, and sprinkle with Parmesan cheese.

Bonjour Caroline, This would be the FONDANT AU CHOCOLAT on page 112
Thermomix : 7 minutes + Oven: 30 minutes
Ingredients: 250 g of chocolate / 150 g of sugar / 125 g of butter / 50 g of flour / 6 eggs / salt
1) Preheat oven to 180 C
2) Insert the butterfly in the bowl. Add the egg whites and a pinch of salt and set to 4 min at 37 C, speed 3.5. Put aside the aerated (en neige) egg whites in a salad dish and remove the butterfly.
3) Put the chocolate in pieces in the bowl and mix 10 sec at speed 9. Scrape the sides of the bowl with the spatula to make the cacao fall to the bottom.
4) Add the butter in pieces and mix 2 mn at 50 C, speed 2
5) Add the sugar and egg yolks and set to 30 sec at speed 4
Scape the sides of the bowl with the spatula and add the flour and set to 20 sec. at speed 4
6) Pour the mix in the salad bowl with the egg whites and mix delicately
7) Pour into an buttered oven baking dish,  22 cm in diameter and cook approx 30 mn at 180 C. The blade of a knife should come out moist but without any of the mix sticking to it.

You'll have to bear with me for some of the English cooking terminology.

Well, I don't actually SPEAK all those languages (but I do speak Spanish, English, French and Italian). I actually work as a translator. For German and Portuguese, I understand enough to read recipes, that's all (sweet tooth and all). And I collect cookbooks (I have over 600 which is beginning to become a huge problem!). :'(

600 recipe books - that's impressive :o
I have nowhere near that many and often find that searching for recipes is a chore. I've found the eat your books (http://www.eatyourbooks.com/home) website is great - they have indexed many recipe books in a searchable fashion. You can create your own 'bookshelf' of books you own, and so a search for an ingredient or type of food will show which of your books the recipes are in.
DH bought some sweetbreads last week (hmmm) and we found that we had 60 recipes to choose from!  Does make looking around a lot quicker, and thankfully the sweetbreads were quite nice.

I have no affiliation with the website but have found it so useful. I think most of the books they've indexed are written in English, so this won't help those with large collections in other languages. You can trial the site for free but pay a small annual fee for ongoing use.

would love to speak even more languages and plan to when i get around to it...already speak english and french and italian and spanish were next on my list with portuguese not far behind..i love having books in both languages and would be able to pick a word here and there in other languages but not enough to follow a recipe i imagine lol...love the world that opens up to you when you speak more than one language... :)

Wish I cold speak French. Love the multiple cultural communications hear in Paris. We attended a concert last night at Notredam Cathedral. I queued for tix. In front Russians me then a Brazilian lady behind attempting conversation. Don't get that in Mandurah! The consort was amazing.

Yep lots of tourists in the warmer months but not so much in winter...i love paris in winter...very very pretty with all the fairy lights in the trees along all the streets, the window decoratins etc etc  hope your enjoying your trip bedlam... :)

oh leaving today  :(  well have a safe trip back ...  I realy cant stand that trip to or from oz ...so painfully long...done it so many times and I am so sick of it that I feel a litttle ill and not as excited as i once was many eons ago lol!  Probably would be different alone or xith DH only but I am always travelling with kids and thats not fun... if you have a room get a good sleep in between..that always helps.. i usually sleep, shower, change etc and its nice to leave my tyhings in the room while i go for a shop or wonder around ... :)

Ok I have the slowcooker meets thermomix book - it is in German but I want to get it translated - will do on google when I have a chance (& the kids give me some breathing space!! ;)) if anyone is interested. I also have a spanish one I'm working on - trying to bumble my way thru that one as I have a HSC in spanish, so using it as a refresher course!!

Here's the Country Pâté:

(Prep. time 15 min + THX 1 min + 1h and 30 min baking)

(8 servings)

250 g pork loin (échine de porc)
100 g veal shoulder (épaule de veau) (???)
100 g fresh rendered lard
one thin slice of lard
1 medium onion (60 g)
4 stalks parsley
2 eggs
2 Tbsp armagnac or cognac (brandy)
1 tsp allspice or quatre épices
80 g shelled pistachios or hazelnuts
1 bay leaf
1 branch fresh thyme
2 tsp salt
1 tsp black pepper

Preheat oven to 180ºC.
Cube each meat separately into 3/4 in (2 cm) pieces.
Put into bowl the pork loin, salt, pepper and allspice and process 5 seconds on speed 9.
Empty contents of bowl into salad bowl.
Put in THX bowl the onion, halved, and the parsley cut in 2 or 3 pieces. Process 5 seconds on speed 6.
Add lard and veal, process 10 seconds on speed 6.
Add reserved pork loin, eggs and Armagnac; process 10 seconds on speed 4.
Check for taste and salt or add more spice if necessary.
Slightly roast nuts in non-stick frying pan and add them to mixture.
Cover terrine mould with slice of lard, slightly exceeding edge. Pour stuffing on this, put bay leaf and thyme sprig on top. Fold edges of lard over the stuffing. Close terrine and seal edges with a paste made up of flour and water.
Put in oven, inside a baking mould filled with water. Bake 1 hour and 30 minutes at 180ºC.
Let cool and chill about 24 hours before serving.

And here go the Leeks in mustard sauce:

(5 min prep time + THX 30 min)

4 leeks
230 g milk
130 thick cream
30 g butter
30 g mustard
1 Tbsp lemon juice
1 pinch sugar
2 bay leaves
20 g flour
1 pinch of salt
20 grains of black pepper

Put in bowl 500 g water and the bay leaves and grains of pepper.
Wash leeks and cut in 5 cm pieces. Place in Varoma.
Place Varoma on top of bowl, set 20-25 minutes Varoma temperature and speed 1.
Set leeks aside and empty bowl. Put butter in bowl and programme 30 seconds at 100ºC on speed 3.
Add flour and programme 30 seconds at 100ºC on speed 2.
Add milk and cream, set at 3 minutes 30 seconds, 100ºC. speed 2.
Add mustard, salt, lemon juice and sugar. process 30 seconds, speed 3.
Pour sauce on leeks, serve immediately.

THX suggestion:
Put in basket 600 g of peeled potatoes cut in pieces while leeks are cooking.
It will make a light meal for 2-3 people.
