Strawberry Foam:
serves 4:
Ingredients:
300g frozen Strawberries
150g icing sugar
2 egg whites and 2 teaspoons lemon juice
Preparation:
Blitz sugar to make icing sugar, then add strawberries and blitz on 6 for 30 seconds. Scrape down, place butterfly on blades, add egg whites and juice all in together! Program approx 2 mins speed 3 and 1/2! Delicious strawberry foam! Wow! Can be frozen, or apparently can keep in fridge for a while too. Although have not managed to have any leftovers yet to experiment!

Tips/Hints:
Can be made with other frozen fruit, like pineapple, peach, banana and mango. Not too sure about other fruits, would like to try out with granny smith apple, bet that's lovely!

wonderful. I always add a frozen banana to make it creamier - did it once to make up for too little strawberries and now we prefer it that way.

JD - I made this today as an extra dessert and it worked out beautifully (even though I forgot to put the banana in it). However the 3 grand-kids didn't like it . I enjoyed it and DH ate all his but didn't comment. After the first family left DH decides to tell me he REALLY liked it and couldn't understand why the kids didn't. Wish he had said he liked it in front of them though. Put the leftovers in the freezer then the next lot of visitors got it too, albeit in a frozen form. They all loved it - GD and baby GS gobbled theirs up. How different families are - first lot were DH's, second lot were mine.

cookie1 - We loved it. I actually used only half the quantity of sugar and I froze the bit of strawberry foam that was left. It makes a lovely ice-cream, it doesn't set really hard and is easy to serve. Very nice and another use for strawberry foam. I'm going to try mango in the next few days, as foam and ice-cream.
Chelsea - The fruity dream recipe from the EDC (a very similar recipe) has just 60g of sugar and I find that sweet enough.

Shayla - When I make mango or pawpaw sorbet I add some lemon rind to the sugar and usually put half a lemon in too - this would probably help make the mango foam less sweet?
Nay-nay - We loved it here!! Thought it was little like crepe filling so made crepes to wrap around it and fresh strawberries on top. MMmmmm!
Sundari - made the strawberry and banana foam - strawberries weren't frozen so did an extra 2 min on speed 4 and came out just like the photo's. Would also reduce the sugar next time as it is very sweet. Have frozen some to try that tomorrow.
The foam kept well in the fridge ( haven't tried the frozen portion yet) and was very nice on my scones instead of jam and cream.
This makes great light fluffy dairy free ice-cream both the strawberry and orange versions tried so far.
Sim - I just made banana foam! So lovely and creamy... with no dairy, yay. It would be nice with vanilla. I just used sugar, frozen banana, and egg white. I didn't measure anything either, lol! It was really yum. I was wondering if it would work with frozen yogurt cubes instead of fruit. I can eat yogurt but not milk, so I am curious. Might give it a go soon.
cookie1 - I freeze the leftover Strawberry foam and then eat it as soft serve ice-cream.
Try fresh banana with frozen yoghurt cubes or if you use both frozen add a bit of liquid yoghurt to help it blend.
Thermomixer - 70 % frozen and 30% liquid is the general rule ( I think - but don't quote me).
mel81q - This is a great recipe - having had a few failures, i was pleased to say that this tasted absolutely lovely and it looked just like the photos. Even my fussy brother in law went back for thirds - needless to say everyone else was disapointed there wasn't more!!!! Thanks for a great recipe.

Angela - I made this tonight with frozen raspberries, very nice indeed but very rich! I might try the Fruity Dream in the EDC next time and see how it goes with one egg white.
ILB - My goodness!!!! This is divine! Mum and I sat there thinking of so many other uses while we enjoyed a bowl each....
You could blind bake some little pastry cases, when cooled, add some foam and top with a little bit of chosen flavour fruit as an easy dessert/finger food/work morning tea idea... or on piklets
Used in a sponge as the filling in between the layers.
Use instead of cream in the butterfly cakes.
Fill a chocolate basket with this and matching fruit for a divine dessert.
Loved the scones with this idea instead of jam and cream. Would be wonderful in crepes.
DD didn't like it originally but ate it frozen (on the promise of home made vanilla ice-cream to follow).

Sounds deliciously light and moorish. A bit like a syllabub without the cream and calories.

Do you think if you put a touch of balsamic and black pepper in (possibly in place of the lemon), that it would enhance the strawberry flavour?

Good call Katya - think maybe half of the lemon juice, about 1/2 tsp balsamico (depending on variety used) and some freshly ground black pepper. Great combination.

I was going to say to Quirky Jo on my blog that you could use egg whites instead of cream with the beetroot and chocolate. Then I saw this and am sure that it would work.

I bought some slightly cheap strawberries this morning so I plan to put some in the freezer and make this. Hope it looks as good as the picture.

Judy, its a little softer then soft-ice cream when first made, the eggwhite foams it up and it does not have the structure of soft icecream. I then place it in a container to freeze and it becomes firmer - that's the best I can explain - sorry!!!
Good luck Cookie1, you will be surprised as how easy and quick its made.
I forgot to say that I always add a frozen banana to make it creamier - did it once to make up for too little strawberries and now we prefer it that way.

We loved it. I did mention somewhere else that DH remarked about it being cooked. He wondered if it would be a strawberry meringue. I will try it next time-on a big tray so that if it melts I can catch the mess.

It certainly had the consistency of meringue. Can't get my egg whites to fluff up like that on their own so don't really understand why the volume of this foam was so full. I used room temperature egg whites as I would for a meringue.

I froze the bit of strawberry foam that was left. It makes a lovely icecream, it doesn't set really hard and is easy to serve. Very nice and another use for strawberry foam. I'm going to try mango in the next few days, as foam and icecream.

Ha ha Cookie1, I thought exactly the same thing and was going to post it but thought someone would tell me it was nothing like ice-cream. Think you could also get away with less sugar as it was quite sweet.

I actually used only half the quantity of sugar Judy as we don't mind if things are a bit tart. I may use even less in the mango one. It won't be a cheap icecream as I paid $7 for the frozen mango, but it's only to try it. If it's nice I'll freeze some IF I can buy any cheap when they are in season.

Good idea Cookie1 - I can always find cheap mangoes during the season so will be doing the same. Unfortunately, I am the only person in this family who loves mangoes - can't understand why my DD's don't like them. Means I get to eat them all on my own though without feeling guilty ;D ;D ;D

Sim, I had a similar thought - wanted to imitate McSundaes with M&m's. So I froze cream and tried to purré it and added the egg white and was left with something so strange (look and tastewise) that I through it into the bin.
Well done Sundari. I have never kept it in the fridge - had no idea that the foam kept stiff for so long.

All this talk of Mangoes. They will be on their way soon to other parts of Australia as I bought a Kensington Pride today in Woolies for $1.95. Outrageous price for me but had to have it instantly. Not as nice as the Bowens which will be ready very soon. I have been driving over some nearly ripe ones the cockatoos have torn from the Mango trees. Huge mango trees at my Curves and pulp everywhere on the ground. Not long now.

Cookie I have written to Aldi twice recently practically begging them to come to Cairns but they say it is not viable due to logistic problems and being more than 4 hours away from their supply depot. >:( >:(
I say build a depot in Townsville and then you can serve two communities. We NEED an Aldi.

I did hear recently (don't know how much truth in it) that Aldi would not come to WA while we had such restrictive opening hours.

aldi are quite restrictive in their hours anyway! they close at 6pm on week nights ;) however they open on saturdays and sundays, til 4 or 6pm i think

Over here the shops close at 5 or 6 all nights except Thursday when it is 9. Saturday is 9 to 5 and Sunday is closed. I love it when we travel East as the shops are open on Sundays.

Nice to hear you did something you were happy with Mel. Hang in there, it will all come together before you know it. Just check on the forum first to see if there has been any tweaking of a recipe and then you shouldn't have any problems.

But honestly it doesnt taste of raw egg, nor like meringue. I know it doesnt sound too appealing raw egg! The only way I can describe it is a fruit mousse, with tiny pieces of frozen fruit inside. Have you tried it? Its worth trying, it freezes well too! You may be surprised!

I have never had a problem with raw egg whites - but haven't had many dietary problems - Meganjane - is it the health issue or just taste/look?
I use raw egg whites for mousses and fools.

The thought of raw egg white doesn't sit well with me either, but if it's not for health reasons it is well worth trying. My first taste was done carefully but I made myself not think about it. It really does not taste of the egg at all.

My mum is just the same but what she "doesn't know won't hurt her" LOL. (It's just the thought of it) But it just isn't as creamy without it - more like a granita texture. ;)

I'll try it and see. My mum used to make a dessert called Apple Fluff or something like that and it had raw egg white in it. I used to eat it without a problem. It was only when I asked for the recipe that I didn't eat it anymore!

LOL - and we complain about the kids !! Love it - MrsT is just the same - almost gagging when I showed her some sea urchins that I had dismemebered, but adored the custards that they went into. She eats less of my weird stuff now that we have been married for a few years. Used to say how delicious it was when we were courting ;D ;D ;D
I love apple snow/fluff - if you prefer, you can make some apple jelly with gelatine and when it is nearly set, froth with the electric beaters - it is a similar effect without the icky whites.

The things you sit around thinking of when you are recuperating ILB ;) ;) Loved the idea of filling chocolate baskets with the foam. I like it either way, fresh or frozen but had various responses from people (including children) with the one and only batch I made. Surprisingly DH enjoyed it and he is not a sweet person generally.

Lots of clever thoughts ILB. I was like Judy and thought of the chocolate baskets with it in. I may stun my brother with that one. Strawberries soaked in booze in the base and foam on top. Thanks.
