Hi all
I love to bake! in the last two weeks that I've had my thermomix ive spent some time researching recipes so that I can learn to convert my own.
I've noticed that in some recipes, people use the interval function to mix in the flour, many others use does 3 or 4. I thought the interval function was just for kneading. can anyone explain to me why you would use the interval function for mixing in flour?

Romina, I often use the interval speed for folding in ingredients as I then have more control over the timing. You can watch through the hole in the top and when folded in, stop the machine.

but say you use speed 3 or 4, couldn't you still look through hole in the lid and stop when it's all folded in?

Yes you can. You do what suits. Good thing about the TMX is that you can play around with the different functions and then use them to suit your purpose. When you start to convert , you learn so much more about the limitations and possibilities. Have fun.

I find interval more useful when baking ... I have gone more and more to using it for my baking over the years :)

Interval speed in very useful for incorporating things such as choc chips or fruit into cookie/biscuit dough. Sometimes the regular speeds don't move the mixture enough to distribute those things evenly.
Like faffa, I use the interval speed for baking a lot more now than I used to :)

I almost always use interval to combine flour into baked ingredients. I do it so that I can stop it when it is combined too. I don't want gluten developing in my cakes and biscuits making them tough.

what is "interval speed" Had my TM for over 2 years and never heard of it!! ???

It's the dough making button auds. The one with the wheat symbol on it.
