Name of Recipe: Strawberry Liqueur Conserve
This made 3 small jars of jam and 1 small bottle of liqueur, the recipe was given to me by an old friend many years ago. Tonight was the first time I made this recipe in the TMX.
Ingredients:
Liqueur
500 grams strawberries
1/2 cup sugar
1/2 cup gin
Hull strawberries and combine with gin and sugar, in a jar or glass bowl, cover and stand for 3 days, shake or stir gently several times to dissolve sugar.
After 3 days strain and bottle liquid, nice over ice cream.
Conserve
250 grams fresh strawberries
drained Strawberries from liqueur
190 grams sugar
2 teaspoons lemon rind (I used 1 lemon)
2 tablespoons lemon juice (I used juice of 1 lemon)
Place all in TMX 100 degrees 40 minutes, speed 1, the last 10 minutes I cooked on Varoma. or until mixture reaches a spreadable consistency when cooled on a plate. Pour into sterilised jars and seal.

Yum, I am so going to be making this Jen. My bottle of gin rarely gets used. Tell me, how would one drink a strawberry liqueur - neat or mixed with something. Agree with you CC, great for Christmas hampers.

The half cup of gin and strawberry juice and sugar made about a cup and a half.
I was thinking maybe some soda water or straight.
It's nice over ice cream that I can remember. :)

Well with that quantity, using a nice maple syrup bottle would be a nice way to gift it. 2 batches would fill 3 bottles.

I've done something very similar with vodka and it worked well. I didn't make jam with the leftover strawberries though. Now I think that I should have!
All I did for the strawberry vodka was lightly coat about 500g of strawberries with sugar and then pour over vodka (big coffee jar or something works). Turned it every day for about two weeks (until the colour all came out of the strawberries) and then strained the liquid off. Was really nice straight or with soda water or in any sort of cocktail.

I made this, with a few modifications. Overall a success with some lessons learnt.
So, for the liquor part I used:
250g punnet of strawberries wit the tops chopped off
250ml gin
4 heaped dessert spoons of sugar
soak for 6 days in a 500ml preserving jar and shake gently everyday
after the soak drain the liquid through coffee filter paper (this is long and slow but worth it for the beautifully clear liquid)
I strained the liquid into a crystal head vodka bottle which looked pretty cool! I think I got about 350ml of liquor.
Note: Do not freeze. I put mine in the freezer overnight and it froze. Moved it to the fridge and it is fine in there.
for the conserve i used:
drained strawberries from above (minus a few that were taste tested)
120g sugar
50g packet of jamsetta (this is way too much!)
juice of 1 lemon
cooked at 100c for 30 minutes then varoma for 10 minutes.
Made a lovely tasting conserve but it is far too solid. Would be ideal if you needed the jam to be a very firm shape. When I make it again I think I'll leave out the jamsetta all together. Then perhaps try and find a happy medium.
With all things that I preserve, I boiled the jar for 10 minutes and left it to cool in the saucepan. I do this to make sure that I get a good vacuum seal.
Highly recommend that everyone tries some sort of variation of strawberries soaked in white spirits.

What a great idea this is Jeninwa!!
I made the sauce using vodka instead of gin, then I used the soaked strawberries to make Teninas vanilla and strawberry jam (FFS) and added in a punnet of fresh strawberries - and it worked just great!
The sauce is just glorious. I can see this being made again and again

When you soak the strawberries & gin/vodka, do you refrigerate it, leave it on the bench or in a dark cupboard?

JD I just left mine on the bench, I covered the bowl with a shower cap. The cheap ones from the $2.00 shop. Lol
I had been meaning to post to say that the liqueur is nice with ice, but I have been enjoying it with lemonade. I must make some more.

I've made a few batches of this recipe. The first was a single batch as per the recipe followed by the conserve.
The second batch I made strawberry fruity dream from the EDC instead of conserve. Because of the alcohol, the fruity dream leftovers are easy to remove from the freezer container but it is a little strong (certainly no good for children) so perhaps half fresh/half soak strawberries would work better.
My last lot made was a double batch (by now you can probably tell that I love the strawberry liqueur :-))) and once again froze the strawberries after they had done their job. I've now used them in this recipe I'd made before from Chookie (it's in topic 6628.0). I doubled the recipe and ended up with a 1.5 litre container full to the brim with some leftover that wouldn't fit into the ice-cream maker. You would think it would be quite scoopable with all those vodka soaked strawberries but it still is quite a firm ice-cream. I serve with a sprinkle of Strawberry liqueur.
Magic Strawberry Icecream
1 1/2 cups of hulled strawberries. (I used half vodka infused strawberries and 1/2 fresh)
1/2 cup sweetened condensed milk
30g white chocolate chips
1 dessertspoon of vodka (I used the Strawberry liqueur)
1/2 teaspoon vanilla extract pinch of salt
1 1/4 cups of whipping cream
Whip cream to soft peaks, set aside. No need to wash out bowl
Zap strawberries to a pulp. Should give 3/4 of cup, set aside . No need to wash bowl
Add con. milk,chocolate chips, vanilla and vodka to bowl.with salt. Mix and heat until chocolate melts.
Cool for 10 mins and fold in Strawberry mash and 1/3 of the cream.
Pour over remaining cream in bowl. Fold in by hand to combine.
Freeze in air tight container until firm. Minimum of 6 hours. (Churned for 40 mins in Ice-cream maker then placed in the freezer to firm up)
If not eating immediately, place glad wrap on surface of ice cream.

Clever Judy. I love the jam this makes and I just tried the strawberry gin, even though it is only 1 pm. I love it very much. Such a rich beautiful flavour. I won't be putting it on icecream at all, just down the hatch. I love it even more than my Mandarincello

I tried this again yesterday, OMG it has improved so much. I could almost sit down and drink a glass full but I would be under the table. I will be buying duty free gin next trip OS.

I'm sure you could kinta but once you taste it yourself, it might disappear before Christmas. I made mine in October last year for gifts I think.

I'm testing the strawberries and the syrup every day. I was worried as I added extra gin so the strawberries were covered but didn't add extra sugar. I like the balance though, not too sweet. Thinking of freezing the strawberries and adding them to my summer gin and tonic!

One lovely bottle of botrytis gets another life as my strawberry liqueur. It's in the fridge but is that necessary?
My strawberries are frozen in 15 cubes of lime juice (nearly halfway through my lime stash) and the rest made into 2 jars of jam with 350g fresh strawberries and lime not lemon.
DH was appalled at the tang of my jam (why isn't it sickly sweet, did you add sugar?). I mentioned the lime but made no mention of the gin ; )!

After talking about this with Jen and Cookie over our coffee, I bought strawberries and gin on the way home yesterday to make this .. off to the kitchen now. You ladies are leading me astray lol

This jam reminded me of breakfast at club med New Caledonia in 1986. I've been trying to recreate that memory for a long time now.

Can I use brown sugar for this?
I used raw sugar to make mine as I only have that or rapadura in my house. It turned out fine. Will take a picture and post. Haven't made the jam just yet - no time! Have frozen the strawberries through ;)

Hi all, just thought I would pop back and report that I have made two batches of the Strawberry Liquer and Conserve, one with Vodka and one with Gin.
Each batch made three each of the small liquer bottles (I must measure how much these hold) and three + a small sample pot for myself of the Conserve. I used raw sugar both times.
The pic is one I have packaged up for a gift. First time attaching a pic - hopefully it works ok.
I think I like the gin liquer better and have only tasted the gin version of the Conserve – yummy (your right, I want to keep it all to myself and not share)
Am already thinking of what other fruit I could do the same process with, have in my head that I would really like to try pineapple with Malibu.

No absolutely not. You must taste the liqueur first. If you think it should be a waste to bottle it, consume it all and declare to those concerned that you have to start again.

It does! I think all up they sat for 10 days :) now to use up the strawbs. I've put them in the freezer for now. May make a nice daiquiri.

On page 2 Cookie you will see where I also made ice-cream from the soaked strawberries and I was surprised the ice-cream set as hard as it did. I've since found out that any ice-cream kept in the freezer section of my fridge is far more scoopable than that which is kept in the stand alone freezer so now all ice-cream is in the fridge freezer.

It's delicious cookie. I used probably just under 1/4 cup of liqueur. I made 2l of icecream. Added an additional egg to my ice cream recipe and used mainly cream.

I made a half batch of this a few weeks ago and froze the strawberries so think I might get some more strawberries on the weekend and give Judy's ice cream a go in the new ice cream maker.

Made this the other week.. Left it about a week though instead of a few days as made it at mum and dads then it travelled home with us and sat a few days as I got too busy... Froze the strawberries and liqueur in fridge yet to taste as keep forgetting about it and im not a huge drinker... Made with a kilo of strawberries i picked with the kids at a local strawberry farm on the sunshine coast.. Will have to taste tonight :D

A few weeks ago I found a jar of macerating strawberries hiding in the back of my fridge. I ate a dozen domes of deliciousness while watching mindless Telly and got a bit merry!

My strawberries have been macerating for 4 days now, not sure whether to leave them for another few days or make the conserve today.
I made Skinnymixer's Health by Chocolate yesterday and spooned a small portion of the liqueur over that ... delicious!! (but perhaps had I held off for another week it would have been nicer?)

It's a bit potent for her. She could have the jam and you the liqueur.
I find it tastes even better after being in the fridge for a few weeks. It loses the 'rawness'.

I am about to make some of this but only have rapadura sugar on hand at the moment - I am not wanting to buy a bag of white sugar just for this. I guess the colour would be muddier, but other than that, do you think rapadura would work or should I resort to white sugar.
It is about time this great recipe was bumped again, anyway.

Marina I saw earlier in the post that Faffa has made this using raw sugar.
I wouldn't use rapadura for this as it will make it look very muddy, and it will change the flavour slightly. Learnt this the hard way. I one used rapadura in lemon butter and regretted it. It looked unappetising and didn't taste right. Will be interested to see what you decide.

Love this. So easy and so good! A little splash of liqueur in sparkling mineral water with ice is lovely (i'm not a fan of sweet drinks) and the jam is fabulous! Thanks for bumping this one Marina :)
