Sticky Orange and Fig Fruit Mince

Sticky Orange and Fig Fruit Mince
This can be made up to 2 months in advance
Ingredients
1 green apple, peeled and cored
1 cup brown sugar ( I used muscovado)
3 teaspoons orange rind
375 g mixed fruit (buy or create your own)
1½ cups raisins
1½ cups sultanas
½ cup jam
1/4 cup orange juice
1/3 cup Cointreau or Triple Sec
1 cinnamon stick
Preparation
Place Apple in quarters, sugar and orange zest into bowl. Blitz speed 5/6 until the apple is chopped into fairly small pieces.
Add the rest of the ingredients and stir through with a spatula.
Place into an air tight container, with the cinnamon stick and store in the fridge. Stir every few days.
You can use any dried fruits you like. I have used cranberries, currants, sultanas, figs, raisins, dried apple and a few dried apricots. (both chopped)
This recipe is based  on one in Food Ideas
May all dairy items in your fridge be of questionable vintage.
