I recently found this recipe for mango chutney. It's delicious, we can' t stop eating it.....
Hope you all enjoy it as much as we do!

Ingredients:
1,5 red onion
2 cloves of garlic
375 ml apple cider vinegar
4 mango's, not ripe yet
2 apples, peeled, cored
500 g light brown sugar
1 ts cardamom
0,5 ts clove powder
0,5 ts nigella seeds
0,5 ts fenugreek
0,5 ts chili flakes
ts cinnamon
250 ml water

Cut apples and mango in small chunks.
Chop onion and garlic 5 seconds speed 7.
Add vinegar and spices, 10 minutes 100 degrees, speed 1.
Add mango's, 15 minutes 100 degrees, speed 1.
Add apples and water, 20 minueta 100 degrees, speed 1.
Add sugar, 60 minutes 100 degrees, speed 1.

The chutney must be quite thick after this, the chunks of mango still recognisable. If
not, allow to cook for another half hour.  Put in sterilised jars.

Hi Jacq,

I am going to make some of your Mango Chutney as soon as our Mango's are ripe enough.  The tree is quite prolific and they usually go to waste.  I notice in your recipe, you say Add Vinegar at the end of your recipe (after you have bottled it).  Could you clarify when the vinegar is supposed to be added.  Much appreciated.

Is it ok to use ripe mangoes or do they need to be unripe to succeed?
I have lots of ripe mangoes and would like to try this recipe.

Hi everyone. Sorry, the add vinegar at the end was mistake, never saw it until you guys mentioned it. I deleted that bit. The vinegar has to be added during cooking.

I tried this recipe with ripe and unripe mango's, both give a delicious mango chutney. When you use ripe mango, you have to cook it a bit longer since there is more fluid.

Thanks for the clarification, Jacq.  Is the cardamom powder or whole?  Same for the fenugeek and cinnamon.

As hubby is a diabetic and I don't really like mangoes, the mangoes sit on the tree and go bad.  This may be a way for me to use them, even if I give it away as gifts. :)

We go through jars and jars of this chutney, it is that good! It goes beautifully with Chelsea's Chicken Kievs or with curries. I also give a lot of it away as gift, everybody really likes it. Hope you will all like it too. :)

Jacq this sounds lovely. I'm assuming with ripe mangoes there would be no actual pieces left after that amount of cooking. Also does it matter if you use red or green apples?

Hi Wonder, I found that it doesn't really matter what type of apples you use, I usually take what I have available. And yes, if you use ripe mango it's much less chunky than if you use unripe mangoes.

I've got this cooking now, ten minutes to go and it smells fabulous. I'm just looking at Indian curry recipes to make a curry for tonight to go with it!

I've just made this and it is really runny  ??? I ended up adding some cornflour towards the end but it didn't do much. Am going to refrigerate and hope this helps solidify it and cook some more tomorrow. Was hoping to use it at a BBQ tomorrow afternoon.

Sad to hear it's so runny, Zelda. That has never happened to me before, I''ve made this a number of times and everytime it is okay. I have noticed a difference when the mango's are ripe, the chutney is not chunky anymore and is a bit runnier, but even then it is still okay. You can try to cook it a bit longer?

Hi guys, I would love to try this, it sounds yum! Problem is I've never heard of 'fenugreek'? Neither of the shops in town have it, or nigella seeds. Could I substitute something else? Mixed spice maybe? I dont want to leave making it too long or my mangos will go off :(

My mango's are still on their way, but I ordered fenugreek and nigella seeds on ebay.  I noticed our local kitchen shop has a good range of herbs the other day.  I have never seen either of these in coles or woolies.

I don't think I've got any hope of finding them in Karratha  :( However I found an indian spice website that says you can subsitute cumin seeds for the nigella, and just leave out the fenugreek, so thats what Im going to try!

Let us know how it turned out without the fenugreek, Red Kell. I think fenugreek is one of the spices added in curry powder.

Nigella seeds are another name for onion seeds, according to the Indian Cookbook. I bought them at our local green grocery.

Well, I cut up the Mangoes all ready to make this, got out all the ingredients and realized I've run out of cardamon! >:( I've taken this as a sign that I'm not meant to make this just yet, so have frozen the mango instead! :-)) Sorry, maybe next time I'll be a little more organized LOL!!!

I'm just making this now with ripe mangoes.  Oddly I couldn't fit the water into the bowl, so left it out.  Was probably just as well because after 90 mins of cooking it is still fairly thin.  Will thicken up sufficiently when cool i think, but I'd say skip the water if you're using ripe mangoes.

DH and DD report it is delicious too!  Thanks for the recipe :)

I am going to make this recipe, but can anyone tell me if it is 1.5kg of red onions or 1.5 (ie 1 and a half) red onions?
