I’ve only had to do another couple of batches of cumquat marmalade. I knocked back the offer of more fruit as I’m over it.

I’ve made heaps of salads, cooked a rolled chicken breast with pistachio and cranberry stuffing. Made a terrine, a rye SD loaf.  We tend to have much the same each year but we enjoy it. I’m doing a different salad this year. It’s small tomatoes of all colours, torn up Basil, EVOO as the dressing with burrata on it.
May all dairy items in your fridge be of questionable vintage.

Made brandy butter , brandy cream custard ! Made the Cypriot grain salad .. well all the parts lots of jars with dressing, toasted seeds , cranberries and lemon juice , herbs , pomegranate Ariel’s all prepped ready to toss together. Going to balance asparagus and sugar snap peas tomorrow morning ! Then I’ll transport it all to MILs as will DHS SIL bring the meat and a few salads . Have beautiful day tomorrow everyone.

Happy Christmas everyone. Going to DD for lunch.  Melb family arrived, so good to see them. DIL doing RTE salmon, I’m providing dips, garlic bread, ham, Turkey breast, DD Salads and drinks.
I did lat minute shop at IGA and was given $35 off shop
Drove to Creswick to collect Xmas Breakfast Croissants from the French shop.

Merry Christmas everyone.
Chookie we have a tradition of croissants stuffed full of fresh berries and jam !
Blanching asparagus and sugar snap peas , making up Cypriot grain salad this am . Taking Plum pudding ice cream, berries put into a bowl ,lots of honey mustard red current jelly etc . Champagne, ham . I’m  going to forget something eek. All to MILs .

Roast beef with roast vegetables, peas, tomato & onion casserole, cauliflower.  Plum pudding & custard, trifle.  For vegan GD stuffed portabello mushrooms, roast veg, peas & cauli.  Chocolate mousse and little fruit tarts.  Only 11 for lunch this year usually it's 14.

No cooking here today at all. I’m so glad we have everything cold as it’s been VERY hot. It’s 5.21pm and is still 41.
This is our meat platter. Not a lot served up as there is only the 3 of us.

Pav was a disaster. Made in TMX.  Amazing what cream and lots of berries can cover up.
Very simple stuff today. Pizza and salads.
Cool today, 19 so might make chicken soup.

Cookie that meat platter looks very tasty and everyone’s Christmas lunch menu sounded great.
Chookie I wouldn’t bother making a pav in the TMX, a bit hit and miss.
I surprised everyone by eating a big plate of veggies, 1 small piece of turkey and lots of gravy.

I will make some muffins much later today. DD is working tomorrow, on the wards, so she takes goodies in to others who have to work. I get to make something and everyone on the ward is happy.

DD just texted from work and said the nurses were thrilled with the muffins. I feel for them all working again today. DD has tomorrow off. They all seem to have worked 2 out of the 4 days.
I made cranberry and vanilla muffins. I put 2 good squirts of vanilla paste in and you can really taste the vanilla. I also soaked the cranberries in boiling water for 10 minutes too. It seemed to soften them up a lot.
