OK, the final verdict is in. 

I thawed out a couple of these at the weekend and they survived the freezer perfectly (although part of each one pulled away slightly from the side of the ramekin).  I had one on the day I took them out of the freezer and it was exactly like the freshly made one last week – very coconutty and rich (because I was by myself and couldn’t hand half of it to DH to finish off, it took me a wee while to work my way through it).  The other one was eaten the day after it came out of the freezer and, once, again as with when it was fresh, I found the second day one was less rich, less coconutty and more to my taste.

So, if you were thinking of doing these for any occasion, I would suggest to either make them a day or two before and keep them in the fridge or freeze them and defrost them the day before eating them.

I was once preparing to post a tube and wanted to check the cost with Aust. Post so gave them a ring and the "very helpful" "customer service" representative just couldn't comprehend that, whilst the tube definitely had a length, I could only give him either the width or the depth but not both as, being round, it only had one (I must admit, I was getting fairly annoyed with him and perhaps I was being just a bit obstructive by this time)!  What made it worse was that it was one of their own postal tubes.  If I can, I always ring the local post office directly now as you generally get more sense out of the counter staff who usually know what they are talking about.

I have also started dropping my onion, ginger and garlic onto the blades as I feel it gives a better cut.

I found that just under 10 seconds at speed 8 for cheddars seems to work.  By the time you hear the sound changing it's just a wee bit too late.  Parmesan is a much easier cheese to grate (why can't they all be like that?)!!!!

Judy, that spread you put on sounds superb.  Even with TMX I wouldn't want to attempt that.

Today is a productive one for me here - LSA, CADA, tofu with veges and cashew satay sauce (based on QJ's recipe), JD's noodle and cheese slice and just finishing off with worcestershire sauce because I am hoping to make HP sauce next week.

Now it's on to company accounts so that I've got a head start on my week tomorrow.

Andie, we got a violin shaped cookie cutter when we were in Cremona, Italy a couple of years ago - I gave it to one of my colleagues in the hope that she would be inspired to make some cookies, but I'm still waiting!

I love some of your oddities - you wonder who actually sits and thinks "...I think I'll make a [shape] cookie cutter today".

Can anyone tell me the trick to successfully grating cheddar type cheese?  Whenever I try doing it I end up with a gluggy lump smeared all around my bowl.  Possibly a speed problem?

Yes, microplanes are definitely the way to go - then grind with sugar to make it really fine.
