Anyone in Melbourne looking for Dashi, I picked some up at the health food stall in Queen Vic market this morning - they had it both with and without bonito.  With any luck, I'll be making this this weekend - really looking forward to it (now that I've put it in writing it means that something will go awry and I won't make it at all!).

Dot, my heartfelt best wishes go to you.

You could try making your normal foods (and, most importantly, special treats) that you enjoy already but spice them up with a strong sauce - the worcesteshire sauce recipe can be pretty powerful.  I'm also planning on trying the HP sacue this weekend as well amd it may have the same 'oompf'.  Mind you, these may not go with everything, but may help to bring out some flavours for your taste buds to get tingling.

Questions? Technical Issues? The Survival Guide / Re: Cooking quinoa
« on: November 25, 2011, 06:50:06 pm »
Usually when I cook quinoa I make it 50 / 50 with brown rice in the basket and it seems to work pretty well.  I put the rice in first, then the quinoa on top and very little seems to drop through.

That sounds far more interesting and exotic than soft brown sugar, Frozzie.

Hope you are all safe.  The fire season seems to come around earlier and earlier each year and lost longer.  Wasn't this one started as a controlled burn?  Things change so frighteningly quickly.

I guess we should all take this as a very strong hint to make sure that everyone in the country are all 'fire ready'.

I froze the juice from the tinned mangos I used when I made this and will use them in sorbets and smoothies, etc. during the summer.

It looks like this reduces down a lot - I take it you don't need much to get the flavour / taste of bacon?  Does it keep well (or is it early days yet and you don't know - or is it so tasty that you have used it all already?).  How long did the 'caramelising' take?  Sorry, lots of questions, it's just that, being a vegetarian, bacon is perhaps the one flavour I miss most, which means I am very intersted in this recipe, so thanks so much for posting it.

Happy thanksgiving (in advance) to all our American friends.  It's a holiday we don't celebrate at all here, although we obviously hear of it.

I laughed at your comment about dressing up to go shopping, Andie - although I'm a bit younger than you, I can remember as a child that I wasn't allowed to wear trousers (or denim jeans) until I got into my teen years (I got there right at the end of the hippy era), fortunately the hats and gloves had dropped out of fashion before I was born.

Suggestions and Complaints / Re: Suggestions and complaints

My parents didn't speak English until they went to school and I always regretted that they never taught me their first language (Gaelic).  Having more than one language doesn't weigh anything and I am told that young kids can easily learn more than one language - as Bonsai said, they are fearless.  I think adults probably analyse a new language too much and are probably a little hesitant about making mistakes amd embarrassing themselves as well.

My congratulations to everyone who encourages their kids to speak more than one language!

I'm still sitting here, undecided, so I very much look forward to your feedback, em, if you want to give it once you've checked out evernote.

Cheers

The frozen mango bars are gorgeous, Kulsha, you'll love them.  I really like the look of your cake as well, everything with mango is delicious, though, isn't it?

Welcome to the forum Bizzle.  There are a couple of threads covering Christmas goodies on this forum, unfortunately I'm not the best at finding them, but some of our members are bound to come up with suggestions and ideas for you before too much longer.

Thanks Cookie and Deeau, unfortunately the problem isn't the cream - he's got a lactose intolerance, but thanks so much for your ideas.
