Title: Lentil & Spinach soup

Name of Recipe:Lentil & Spinach soup
Number of People: 6 serves
Ingredients:
230g onions, quartered
2 cloves garlic (use confit of garlic if you have it)
1/2 - 1 teaspn curry paste (any colour, I've used yellow & green. Quantity is up to you, use more if you like)
1 tblspn veg oil (I've also used confit of garlic oil)
200g potato, chopped roughly
190g red lentils
1litre water
1 tblspn veg stock concentrate
200g spinach, chopped roughly
1/4 cup coriander leaves or parsley if preferred
S & P to taste
Parmesan cheese for serving

Preparation:
Place onion and garlic in TM bowl and chop for 2 sec/speed 5.
Add curry paste and oil, cook 5 mins/varoma/speed 1/MC off.
Add potato and chop 3 sec/speed 6.
Add lentils, water, veg stock concentrate and cook 20 mins/100o/speed 1.
Add spinach and coriander or parsley.  Push down into the liquid with a spatula and cook 7 mins/100o/speed 1.
Add some ground pepper and check seasonings.  Add more salt, it usually needs it.
Blitz slowly from speed 2 to 6 for 5 - 13 seconds.  5 seconds leaves the soup with some texture,
Serve sprinkled with parmesan cheese.

Best made day beforehand for flavours to develop.

CP - Thanks for this recipe JD. I made it and it tastes perfect, and consistency is to my liking. Lots of good stuff in there. Fortunately we have heaps of spinach growing in the garden. I was wondering how on earth I was going to cram in 200g, but surprisingly it melts down quickly into the liquid. Yummo

Marilyn - I made this yesterday, and it was great.  I used a few more red lentils because I didn't want it to be too thin, and probably didn't need to as it was plenty thick enough.  I used a bit less spinach because I didn't have that much - 200g is a lot! - and I too was amazed at how it disappeared into the soup.  I used korma paste - about a heaped teaspoon.  Those were all the changes I think.  It was delicious.  Thanks judydawn!

Rara1 - Had some spinach to use up and googled spinach soup in thermomix and Judy's delicious soup came up. I used Tenina's yellow curry paste. Blitzed it for only 7 seconds. Thanks Judy for a lovely soup.

Thx JD - sounds good.  Wonder if you could leave it chunkier and just blitz the potato section and then cook then lentils whole for a chunkier result?

Soups are pretty flexible Thermomixer, anything goes really.  My DH loved this soup which surprised me. It has a taste that grows on you and is tastier than it looks. It thickens up a little more on the second day which is why I suggested making it the day before.

I have another couple of bunches ready to pick CP63 and have my 2 recipes ready to go - just waiting for the a change in temperature when we feel like eating hot food again.  One is a spinach gratin which I have never tried before (from our daily paper) and the other is a potato/spinach pie with a pastry crust.  If successful, more spinach recipes to follow soon ;) ;)

Sorry, just noticed I had the potatoes down twice - have removed one lot.  :P :P  Handwritten kitchen notes get very messy around here & are sometimes hard to decypher.

I just saw the thread a moment ago and thought I'd have a squizz, seeing as I have recently discovered the yumminess of lentils ;D

I've made this today to use up the last crop from my spinach patch and my potatoes that had started shooting.  As this was one of my early recipes I've revisited the method and made a few small changes plus added a photo. After visiting the dentist this morning and being told not to eat anything on the right side of my mouth until tomorrow, this was the perfect evening meal for me. Thank goodness it was much cooler today though.

I cannot buy curry paste where I live and would love to make this recipe. Could I put in various losse spices instead or can someone tell me the preceding steps to be able to make a curry paste using the thermomix first? This will be my very first time I use the Thermomix and already trying to adapt! Not good but what can a gal in outback Turkey do?

you will find several curry pastes to make. Perhaps one will be suitable.

Pipis, welcome to the Forum. I am fascinated by your post. A TMX in outback Turkey. , !
TMX is excellent for making curry pastes but you will probably need to make more than enough for one meal. It keeps well or you can freeze it.
