Title: brazen20au's Fat/Sugar Substitute for Cakes
Post by: Thermomixer on June 19, 2009, 02:02:31 am

I just replace with the same (weight)

So I weigh the apple sauce first - if I have 200g of apple sauce then I put in 100g less of sugar and 100g less of oil.

And here is how Brazen made the apple sauce to start with (same thread, just further up)

"I usually chop apples into 4's or 8's and fill the tmx, just add a tiny bit of water (like 1/4 cup) and cook on 4 for 7-8 mins!"

(Cause I keep forgetting how to make it and want this in the same spot as it suits my brain)

I found this out by accident once, ran out of butter once while making cookies and used applesauce, worked a treat. I didn't think to use it instead of sugar though, that's a good idea.

I keep forgetting this applesauce tip!  When I read back through the thread, Kathryn said you can replace up to half the fat and sugar in cake recipes which is important information to go with this tip.  :)

I made some applesauce today to replace half the fat and sugar in cakes. I have never done this before, and was wondering if anyone else finds this method works well in biscuits and desserts?

Brazen has mentioned somewhere on here that it doesn't work well for biscuits and slices so have never tried it myself. Don't make a cake or muffins without substituting though  :D :D I guess I should try it out and see what they are like and if my mob would eat them

tried this method with the Lemon/Orange cake P131 EDC. I have used this recipe both ways, and the Original recipe 5/5, the kilojouled down version 2/5 (sorry, the moistness and flavour are very different and its almost like 2 different recipes, my preferred version being the more calorie laden unfortunately  ???) I'm glad I at least gave it a go.
