Cheese and Rosemary Biscuits
Makes about 30-40:
Ingredients:
90g cheddar cheese
125g soft butter
225g plain flour
Pinch cayenne
Good grinding of black pepper
1 teaspoon salt
1 teaspoon of fresh rosemary that has been dried, crumble it
2 tablespoons Parmesan , grated finely
Preparation:
Set oven to 180 degrees.
Grate Parmesan and set aside.
Place cheddar into bowl and grate finely on a high speed until done.
Add butter.
Mix on speed 3 for about 1 minute.
Add all the other ingredients.
Knead until it comes together. Mine took about 11/2 minutes.
Remove and knead into a roll about 4 cm in diameter.
Place in fridge approx 1 hour.
Slice and bake 15-20 minutes.

These sound really nice Cookie, did you have them with butter or something else savoury or just on their own?

They would be lovely served on a cheeseboard. We had them alone as nibbles with drinks last night as the cupboard was bare. They have enough flavour to stand alone. I might have them with tiny cubes of fruit paste tonight as I have some of that in the fridge.

I had some cheese and rosemary biscuits that a friend made last year and loved them - but forgot about them until just now!

Thanks for the bump. I must make some more. I love how the rosemary taste is subtle as it has been dried first.

Unfortunately I had to use dried from a jar rosemary as I didn't have time to dry my own. I used up some smoked cheese I had in the fridge. I can't really taste a smoky flavour. They are delicious and I've had to hide them from DH so I have enough for the BBQ on Sunday. :D

I rolled out quite thin - is best to put them back in the fridge to rest once cut to shape - I didn't with the last batch and they shrunk.

I made a batch of these today. I had forgotten and easy and tasty they are.
