Name of Recipe: Apple Amber
Number of People: 4 serves
Ingredients:
6 apples, peeled, cored and sliced 5 mm thick then cut in half
100g sugar
45g butter
zested rind & juice of 1 lemon
2 egg yolks
Meringue
2 egg whites
2 tbsps castor sugar
Preparation:
Place the prepared apples, sugar, butter, rind and juice into the TM bowl.
Cook 12 mins/100o/reverse/soft speed or Speed 1/MC on for the first 6 minutes, scraping down sides of bowl from time to time. Remove the MC for the final 6 minutes as this helps with evaporation of excess liquid.
Add the egg yolks and blend 10 sec/speed 7.
Place the mixture into a pie dish or make individual servings in smaller dishes. Set aside.
Whip the egg whites until stiff then gently fold in the castor sugar. (I used a hand beater for this step as 2 whites get lost in the TM bowl)
Place the meringue on top of the apple mixture or divide evenly between the dishes used.
Bake in a 180oC oven until meringue is golden brown. I used the air fryer preheated to 170o and cooked mine one at a time for just 5 minutes each.
Serve warm or cold.
I used my apple slicing machine then cut the slices in half - I used Pink Lady but Golden Delicious would be nice too. If using Granny Smiths you would perhaps need more sugar.
I used a 15 cm square dish and a 12 cm round one for Mum.

YUMMY YUMMY YUMMY!!!

LOL, there's a bit more missing now CP. I could have eaten the lot!
-
Thanks for the recipe Judy. Easy and nice.
-
That looks lovely Judy. I have never heard or thought of putting apple with meringue.
-
Looks delicious Judy. I must try this ;D
-
Thanks girls, it's certainly an easy one.

I think I can remember a home economics class and we made "Apple Snow"
-
Judy, this looks delicious. I will certainly be making it.

Judy, I made this last night for sweets, I found the apples were a bit runny even with the egg yolks, I ended up putting in some cornflower, the taste was great I added a little bit more sugar by accident, but I had no complaints so it went down well. thanks.
-
how much extra sugar would you need for Granny Smiths JD?
-
I have no idea CP ;D More can be added after they're cooked so I'd do it that way, starting off with maybe 125g first up.
AB, I guess all apples are different but you ended up with the right texture by using some cornflour.

Made this last night and used the Pink Lady's (I don't need the extra sugar :-))). In my excitement I missed the part where the apples had to be cooked again after scraping down the sides so my apples were a little on the raw side but it was still very delicious. Will definitely make again. Nice balance of apple and lemon with the meringue topping, and was a brilliant dessert after a roast. Thanks JD :-* :-* :-*

I've amended fhe recipe to make it clearer CP.

I made half quantity of the apple mixture but did the full quantity of the meringue, who doesn’t like plenty of meringue! An ideal quantity for 6 little dessert ramekins, I had a warm one for lunch as I couldn’t remember if they were nicer warm or cold. There was only one way to find out.
-
Ah, scientific experimentation, Judy. Very wise. I would guess that it is delicious whichever way you eat it!
-
They look nice Judy.
-
Thanks Margaret, my taste buds aren’t good but at least it was easy to eat.
Marina, yes warm or cold made no difference to the taste - well not to me anyway. I’ve frozen the remaining 4 so that will be interesting to see if they thaw OK. Supermarkets sell lemon meringue pies frozen so I don’t think there will be a problem.
-
I must remember to give this a try when we get home.
-
Looks nice Judy.

Thanks Chookie.
