Pavlova with Raspberry cream    by Izabela Marach
Ingredients
•   4 egg whites (room temperature)
•   220g castor sugar
•   1 tbsp corn flour
•   1tspn vanilla sugar or vanilla essence
•   1 tsp of lemon juice or vinegar

Method
Preheat oven to 150° C.

Attach butterfly, add egg whites and beat for 3minutes and 30 seconds on speed 4.

Add sugar 1tbsp at a time including vanilla sugar, Speed 3 until finished. 

Add corn flour, lemon juice/vinegar and vanilla essence, mix to incorporate on Speed 3.

Place mixture on baking paper on baking tray, shaping round or rectangle, 6 to 8 cm thick.

Cook for 15 minutes at 150° C, then reduce temperature to 120° C and continue to cook for 60 minutes.

Take out and allow to cool.
Variation
If you would like to double the mixture then whip the egg whites for 5 minutes and continue as per recipe.  Split mixture between two or three baking trays and cook for the same amount of time.   The below topping is great when you make a 3 Pavlova stack.  Place the raspberry cream between the two lower layers and the reserved cream for the top layer.  Top with 100g raspberries.

Looks and tastes excellent.

Suggested Cream Topping 
(For doubled batch split mixture onto 3 baking trays)
•   700ml pure cream
•   500g frozen berries (defrosted)

Insert butterfly.  Place cream in TM bowl and beat on speed 3 (approx. 20 seconds – 1 minute, watch closely) until desired stiffness is achieved.  Set approximately 4 heaped tablespoons to one side.  Add 400g of defrosted raspberries and mix on speed 1-2 until fully incorporated.  Use as per above instructions.
General Tips
Some enthusiastic Pavlova cooks leave out the cornflour, producing a marshmallow result on the inside.

i need help getting my butter chicken recipe to work better! the taste is fantastic so i don't want to change that at all...

the first 1-2 times i made this it worked really well (as you can see in the picture) but ever since then every time i've made it the chicken has been basically shredded. i just end up with no pieces of chicken at all, just a thick thick sauce that is all the same texture due to the 'chicken pulp'.

dh made it last night and i asked him to try cutting the chicken slightly larger - not sure how much larger he cut but it didn't help.

any ideas on how i can make the chicken stay together in one piece? should i have large chunks, or cook less time or lower speed to cook or what????

we discovered that #2 likes drumsticks so i bought some the other day sure that there was a TMX recipe that called for lovely legs to make it - but now i can't find one!!! anyone know of one????!

note: if you don't need / want gluten free, just substitute regular flour :)

Buttermilk Buckwheat Blueberry Pancakes
gluten free

enough for 4

1 cup gluten free plain flour (White Wings brand)
1 cup Buckwheat flour (Lowan brand)
2 teaspoons gluten free baking powder (i didn't have any GF so skipped this)
1 teaspoon bicarb soda
good sprinkle vegetable salt (we use Herbamare)
2 tablespoons sugar
2 large eggs
600ml buttermilk
3-4 tablespoons unsalted butter, melted in the fry pan you're going to cook the pancakes

1 cup or punnet blueberries, fresh or frozen and thawed (optional)

1. Place all ingredients except the blueberries in the thermomix. Mix on speed 6 for 10 seconds. scrape down sides and mix on speed 6 for another 10-20 seconds. Leave to rest for 20 minutes.

2. Heat your pan on a medium heat and grease as needed (i just use cooking spray to regrease between pancakes). pour in around 1/4 - 1/3 cup of batter. If you are having blueberries drop some on top - i usually like to push them down a bit so they sit 'in' the pancake rather than on top of it.

3. when the pancake has bubbled and looks slightly set it's time to flip it over gently. it will only take minutes to brown on the bottom.

4. serve with a drizzle of maple syrup. these would probably be nice with the thermomix strawberry sauce too :)
