Sticky Toffee Pudding with Caramel Sauce
Preheat oven to 190°C
210g dates, check for seeds
1 ¼ (260g) cups boiling water
1 tsp bi-carb soda
Place all in TMX and let stand for 5 minutes.
Add:
150g brown sugar
60g butter
Blend on speed 1 – 2 until dates are roughly chopped.
Scrape down
Add:
2 eggs
170g SR flour (or 170g plain and 1 tsp baking powder)
Mix on the dough setting for a few seconds until well blended, scraping down as necessary.
Bake in muffin tins for about 18 – 20 minutes. Stand 5 minutes before turning out on to wire rack.
Caramel Sauce
Combine in TMX:
1 cup brown sugar
100g butter
Blend on speed 2/100/1 minute
Add:
300ml cream
Cook on speed 3/100/3 minutes.
Tip:
These can also be steamed in Varoma in silicone muffin cups.
Edited to change mixing and cooking time for sauce. Had them the wrong way around.

Greyhoundmum - I made this tonight in individual molds nice and easy. Not sure about the instruction to blend the dates on speed 1-2 , I blitzed them on sp 6 for about 3-5 seconds so they were small but still recognizable.
Miss 50s - I'm eating this as I type and I'm in sticky date heaven!!! I also blitzed the dates on speed 6.

Made tonight with only 175 gms dates leftover in fridge from Xmas! They were dry but soaked and blitzed a bit harder than recipe and were fine. Just put a fraction less sugar as fewer dates. Same water. DS had two and loved them. He doesn't know they have dates in them! Made 11 muffins in cases, frozen the rest and the sauce in an ice tray. Yum yum yum. Measured the cup sugar 163 grams but didn't pack it down. Highly recommended.

Here is a recipe for Gulit-Free Sticky Puds (http://www.bbcgoodfood.com/recipes/3070/guiltfree-sticky-toffee-puds).Easy to convert to the TM and you can steam the individual Puds in the varoma.

Thanks for the recipe they turned out looking good and tasted terrific. My turn to cook and I keep turning to the Thermomix and the forum. I suppose when people convert their recipes to Thermomix recipes it becomes like panting by numbers and even I can follow them so i do appreciate the effort people take to do that.

these were delicious I did cook the sauce for another 4 minutes stirring after 2 the sauce is great on ice cream too and today I put some in my chocolate cupcakes

We have just finished the last from the freezer. Hardest part is freezing sauce in small enough amounts to go with each pud.
Must make again. Visitors loved them last week.

DJ, I've seen frozen pre prepared ones in the shops with a layer of sauce on top of them. I wonder if you could do that?

Yup good idea maybe put the sauce on the top in the muffin case and then heat whole thing. But clever thing would be to remove case while still frozen, save sticky mess!

Just wanted to check . . when freezing, does this go into the freezer after baking . . or up to a point, frozen, and then baking later?

didn't have a chance to freeze any::) but I would freeze them already cooked I think dj was going to see how they go she'll probably be able to help you ;D
you could easily just make the sauce when you need it and have the puddings already done

Yes GF freeze after cooking. I make them into muffins, I also make the sauce up the day before, then just reheat in microwave.

I froze on a baking tray loose then bagged when frozen.
Next time putting sauce on top when cakes frozen, then storing.

By request from nephew these are made and in freezer for those who don't like Christmas pudding. Will make toffee sauce tomorrow.

These are great easy puddings to make. I replaced half the dates with dried figs. Unfortunately DS noticed the seeds and won't eat any but I really like the difference in flavour and don't mind the seeds. I'll freeze them and just reheat with some sauce when I feel like a sweet treat.

MJ, I have to agree with everyone else, these are simple and delicious. I had one for lunch with the sauce, now the rest are frozen. This cube tray is perfect for the sauce, it holds 1/3 cup but I've only put in just over 1/4 cup for each muffin.

If I can I think I may whip some of these up for dinner tomorrow night.

I love that idea Judy. The cube tray looks very handy and I would imagine could be used for lots of things like that. I must try and find one on line. :)

I've just had another sticky date pudding with the sauce and amazingly when I went to push the frozen sauce out of the cube tray it was soft enough to spoon out just half which is all I need with 1 muffin. Handy to know, now I'll freeze it in a bigger container and just take out what I need.

Getting in early with a sweet for the kids when they come over next week, I remember these being so easy to make and having great success
with them so these will go into the freezer and I’ll make the sauce for the freezer tomorrow.
