Pina Colada Ice-cream (DF)

Pina Colada Icecream (DF)
Number of People:  Depends if you like to share with anyone  :-))
Ingredients:
1 can coconut milk (400ml)
1/4 cup raw honey or agave syrup or maple syrup
1 cup fresh pineapple, roughly chopped in chunks


Preparation:
1. Place coconut milk, honey and 1/2 cup of pineapple in Thermomix.  Blitz for about 20 secs on speed 8or 9 until smooth & well combined
2. Pour into container and let sit in fridge to chill.  (I usually  leave overnight in fridge)
3. Process according to your ice cream makers instructions.
4. Chop the remaining 1/2 cup of pineapple in the Thermomix - 10 secs on speed 4-5.  Add this pineapple to ice cream maker in the last 5 mins of processing.
5.  Put in freezer for a few hours to set.

i am lousy at choosing pineapples, maybe i will use canned pineapple. squirrel have you tried making your own coconut milk, its quick and easy and yummy  ;D

Ha ha ha... :D  I think alcohol hinders the freezing process.. so no rum  ..  boo hoo.  LOL
I do often make my own coconut milk in the Thermomix, and  do a blend with a can when making coconut yoghurt.
You could probably do the a 50/50 mix on the icecream.  I think the pure homemade coconut milk by itself may not result in as creamy an ice-cream.  I'll have to give it a try sometime I guess.   :-))

Trust you to notice it wasn't there - this one is probably for kids Uni  :D
Thanks for posting these ice-cream recipes Squirrel, with an ice-cream maker on the way, I will be looking for recipes  ;)

Surely you could put 1 tablespoon rum in? I use vodka in my icecreams. :D :D Or maybe a rum syrup poured over the icecream, soak the pineapple pieces in rum. Did I say I liked rum? ;D
May all dairy items in your fridge be of questionable vintage.

A couple of tablespoons. It's a bit of trial and error. Some need more some need less, I don't know why.
May all dairy items in your fridge be of questionable vintage.

This sounds lovely. Definitely on the list to try it, as my DH is trying to be dairy-free.

Can you just make it in the Thermomix and freeze the coconut milk and pineapple? I dont have an icecream machine.

I used to make a mock pina colada years ago, where I worked.

Coconut ice cream
orange juice
pineapple juice.

Mix up in a blender.

Yum. ;D

You don't need an ice cream maker.  It just churns the mixture.  When you make it up, just pour it into ice cubes and freeze.  Then blitz it in the Thermo when you are ready to eat some   ;)
