Julie did you make your own Jerk Paste for the salmon please?

Cookie, yes I make my own pastes and freeze.  I make the salmon recipe quite often for me and use whatever curry paste I have in the freezer at the time, not necessarily Jerk.
In the photo above I used Tandoori paste and in the recipe 2 tbs is mixed with 2 tsp honey and spooned over the salmon before baking.  If using store bought I wouldn't add that much paste as it's generally stronger/hotter than I make mine at home.

If you want the recipe for Jerk, please ask and I can post for you.  I can't remember where I got it from though  :P

Thanks. It sounds a lovely way to do salmon. When I checked out the Jerk Paste recipe the first ingredient was a Scotch Bonnet (?) chilli. I make my own curry pastes too. It's so easy with the thermomix.
May all dairy items in your fridge be of questionable vintage.

Cookie, this is the recipe I use.  Apologies that I can't remember from where I got the recipe.  It's possible it's one that I amended to suit the TM, though I do like to grind spices in my spice grinder. 

JERK PASTE   (I freeze in 1 tbsp amounts)
Spice mix
½ tsp coriander seeds
3 tsp black peppercorns
½ tsp each: ground cinnamon, ground coriander, freshly grated nutmeg
1 tsp ground allspice

Place all the spice mix into a spice grinder.  Process until powder like.

Rest
3 garlic cloves, peeled
2 long red chillies, seeds removed, cut into chunks (if you like hotter, leave seeds in)
1.5cm piece fresh ginger, peeled
zest of ½ lime, juice of 1
70ml olive oil
½ bunch fresh thyme, leaves only

With blades turning on speed 7, drop garlic, chillies and ginger through opening in the lid.  Scrape down bowl.
Add rest of ingredients including the processed spices and blend to a smooth paste, 20 secs/speed 10.  Scrape from the bowl and use as needed.

The last couple of days this has been my dinner; Spiced lamb with tomato parsley salad.  It looks like the lamb is burned in the photo but it wasn't as dark as it looks.  The spices that was rubbed on the outside of the meat has made it appear darker.

The lamb was lovely and tender and I thoroughly enjoyed the low-cal meal.  A drizzle of Helene's balsamic reduction that I made yesterday went perfectly with this, a tsp was all that was needed.  So good.  :)

Beautiful meal Julie.  I've went out at 9 am and didn't get home until 5.45 so my planned dinner didn't happen tonight.  I had scrambled eggs on toast instead.

Beautiful meals Julie.
Using leftover roast chicken and homemade penne, we had cookies chicken and bacon macaroni cheese. The photo is not as good as Julie's, but it tasted delicious.

Julie thank you so much for the recipe for Jerk Paste. I'll make some.
Both meals look delicious ladies.

We had a mince and Vegies dish tonight, I added in some pasta and put it into a casserole dish, then poured a cheese sauce over it and baked it for about half an hour.
May all dairy items in your fridge be of questionable vintage.

Meals look lovely.
I did a roast beef last night, in 1 hour. pretty fast, with veges.
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

I think it might be a McDonald's night tonight. There's too much on and I've been busy cleaning up, the girls have swimming after school, then I need to prep for a job interview for tomorrow.
