Title: Mini Chicken & Vegetable Loaves

Name of Recipe:Mini chicken & vegetable loaves
Number of People: Made 26
Ingredients:
small quantity of sweet chilli sauce and/or chutney
120g carrot, cut into 5 cm pieces
190g potato, cut into 5 cm pieces
160g pumpkin, cut into 5cm chunks
130g frozen, canned or fresh corn
45g sachet low salt Chicken Noodle Soup Mix
1 egg
10 chives cut into 5 cm lengths
3 small spring onions or 2 large, cut into 5cm lengths
500g chicken mince
S & P to taste

Spray a 12 hole mini loaf tin or a 24 hole mini muffin tin with oil.
This is optional - place a teaspoon of sweet chilli sauce or chutney into the bottom of each pan or leave plain for children. I make a selection of all options.

Preheat oven to 180C

Chop the carrot 3 sec/speed 5 - place into a large bowl.
Chop the potato 2 sec/speed 5 - add to bowl.
Chop the pumpkin 3 sec/speed 5 - add to bowl.
Add the corn straight into the bowl along with the chicken noodle soup mix.
Beat the egg 5 sec/speed 5 and add to the bowl.
Place chives & spring onions into the bowl and chop 3 sec/speed 7 - add to the bowl.
Add salt & pepper to taste.
Add the mince meat to the other ingredients and using your fingers (no other way works as good) mix all the ingredients together.
Fill the tins to the top, pressing down firmly with a spoon.
Bake for 30 minutes for the loaf tins or 25 minutes for the mini muffin tins.

Tips/Hints:
You can substitute chicken with turkey mince.
You can form them into small finger food patties (makes heaps) or large ones for hamburger buns (makes 10-12).
They taste even better when cold so would be ideal for children's lunch boxes.

Original recipe from a turkey pamphlet many years ago.

Suggestions form other forum members.

McMich-made one big loaf and sprinkled breadcrumbs and cheese on top. Cook for about 70minutes.

Luel-I did add/change somethings which worked very well:  I only had a small packet of cream of chicken soup so used that, I also had some left over basil pesto dip, threw that in, wizzed up a handful of basil and the same of cashews, speed 7, 6 seconds and threw that in with the mix.  This worked great.  They were delish cold served with some baby spinach, capsicum jam, grated cheese and cucumber.

Amy-made the mixture as a slice.

Jai9-Made this for dinner tonight, with a few substitutions based on what was in the fridge, a capsicum and half a bag of spinach instead of the potato and corn. Also added half a block of feta and used onion salt and stock powder instead of the soup mix

Hi Judy. I have made a few batches of these now. My boys love them. I keep them in the freezer and pop a couple in their lunch boxes and they are perfect when they come to eat them. They help keep the lunch cold too.   :)

Yes, something like that  ;D  Just keep an eye on it.  I can get chicken breast mince so cheap it doesn't pay me to do my own anymore although I have done so in the past.

I made one big loaf out of this recipe. Sprinkled some bread crumbs and cheese on top and baked for 70mins.
Have sliced it up and put it in the freezer so we have easy lunches for work.
I minced chicken breast for this also (a first for me) it turned out quite well. Wouldn't really bother  again I just didn't have any
chicken mince at hand.

Was going to do this but I had already defrosted the chicken, so I cant mince it now. Never mind. Next week.

I took out quite a bit of meat on sunday which I need to use & its 37 today.

Made these today for a picnic we were planning for dinner down at the foreshore.  It's been a while since i did any shopping, so was looking for a recipe that I had everything for - found it with this one.

Great to see the variations worked well Luel, nice to be able to make something without having to run to the supermarket. It's almost like a free meal isn't it?  Sometimes you need 1 ingredient and end up spending much more so best to not have to go there at all.

Just bumping this recipe ....... looks wonderful!

Does anyone have an alternative for chicken noodle soup mix - something similar to the french onion soup mix recipe on here?

Maybe teninas dry chicken stock powder with some dried noodles mixed up?? Or look online for a recipe (dried chicken soup mix) ??

I made these today also and it will definitely become a regular feature in this house for DS3. I love it that there's more than 50% veggies in them. For tonight, I served these with a side dish of creamy pasta carbonara. DH enjoyed them too and said it reminded him of some turkey patties his Mum used to make.

I made this recipe for our dinner tonight and I loved it :D I cooked the mixture as a slice and served it with wedges, peas and gravy. Yummy! :D :D

I didn't have any pumpkin so I used cauliflower instead ;)

Judy, I just wanted to let you know that I sliced some of the leftovers today and we had it in toasted sandwiches with cheese. It was really really yummy, a great way to use up the leftovers :D

Have these in the oven now.. Didnt have chicken noodle soup so just mixed some spices etc with some stock paste and had a packet of noodles so threw that in the mix and put in two eggs instead of one.. Didnt have pumpkin so left it out...will report back on what we all thought of them..

Sour cream or creme fraichewould work too ... just a teaspoon on top of sweet chilli sauce.. I covered the bottom of the pans with a thick layer of chilli sauce.. Went together nicely... Dd isthe most difficult with food at the moment so the fact she hoovered them down is a plus... Everyone else was just a bonus xx

Cleaned out a variety of veg bits and pieces from the crisper tonight and made 8 mini loaves. Don't use dry soup mixes so used a teaspoon of veg stock concentrate instead. Added some bits of feta and I can't remember what else. Shame cos they were delicious  :'(  :'( They all went in a flash! Poor DH missed out again  ;D Thanks Judy.
