Title: Sponge

INGREDIENTS
4 eggs
3/4 cup caster sugar (small measure)
3/4 cup cornflour
1 tablespoon custard powder
1 dessertspoon plain flour
1 teaspoon cream of tartar
1/2 teaspoon carb soda

Method
Pre heat the oven to 180 deg.
Sieve the dry ingredients together 3 times
Beat the eggs in  an electric mixer until thick and creamy and the mixture holds its shape
Gradually add the sugar a little at a time.  It should take about 15 - 20 mins to do this.
Lightly fold in the dry ingredients until just combined,   I use a small hand whisk for this.
Pour the mixture into two greased and lined 8" (20cms) round cake tins and bake for 20 - 25 mins.
Turn out onto a teatowel coverd cake rack and allow to cool.   I turn mine over again so the top is showing
Fill with jam and cream or sliced strawberries and cream.
Ice or decorate the top as you wish.

Thanks for that Margaret. There is nothing like a sponge with some jam and cream, then strawberries if they are in season.

It is MIL’s 90th birthday tomorrow. She isn’t able to chew anything very hard so we decided a sponge birthday cake would be fine. I usually use an old recipe of Mum’s but Margaret’s looks so nice I thought I would give it a try. Here goes.........

I must post a photo. Thank you Margaret it is the best sponge I have ever made. So light it melted in your mouth. I put home made Strawberry jam and cream in the centre, and cream and strawberries on the top. After we had all had a slice we gave the rest to the carers at the nursing home.
