Bron, yes I have less trouble with the pastry in winter than in our warmer months. I keep saying I will try others, maybe one day.  :)

Chookie, it's a really difficult recipe, I hope you can handle it!  :D :D

HOME MADE BAILEY'S
1 tin sweetened condensed milk (I think it’s about 400g?)
300ml carton thickened cream
¼ tsp coconut essence
1 cup brandy (or whisky if that is your preference - I prefer brandy)
1 ½ tblsp chocolate topping
3 eggs

Combine all in a large mixer bowl.  Mix together for 2 mins.  Pour into suitable containers.

Of course  just whizz up in the TM.  It's so simple, but really nice, lasts a while in the fridge too.

I've got a version with egg, but no shell  :o  It's just the best and I have been told it's much nicer than the original. If anyone is interested I'd be only too happy to share.   :)

CP I wonder if it's the same filling recipe? (Margaret Fulton).  I got the recipe on-line but with no pastry recipe, so just use the one I use for custard tarts which seems to work well with it.  Have you tried a home made pie?, as I don't like the store bought ones either.  I agree it must make it hard for you at Christmas time if you are being offered all the stuff you don't like.

Sounds nice Caroline.  I'm new to the jam making thing too and so far have only made strawberry which I'm very happy with. 

So it's okay to use frozen fruit?, the water from the defrosting of the frut while cooking doesn't affect it at all?  That's good to know.  ;D

Has anyone made apricot jam from dried apricots?

Good to hear they were a success.  Mine are patty pan size, little shallow, rounded pans, not like small muffins which are deeper.  Have put a link so you can get an idea of what I mean.   I can get about 40 of them from the amount of filling.  It doesn't matter because I always find one is not enough anyway LOL.  The pastry can be a little finnicky but it's very nice.

Oh Bron I'm so pleased to hear you like the filling s much as me.  I hope the pastry behaves itself for you too.  Of course you can always use your own favourite one in it's place.   It's hard stopping at just one.   :D
