I would love for someone to tell me about how to preserve feta from going off once you open a packet and leave the remaining bit in the fridge.  I am always throwing out half used feta since it has gone off after a couple of days.

One way of preserving feta cheese, is to keep it in brime in the fridge. To make the brime, use 2 cups of water, 2 tbs salt. Boil for 5 minutes remove from TM or hot plate and let it go cold. Place the feta in a container and cover it completely with the brime. Just rinse well in cold water to use it. It should last for more than a month.

I felt sad when I read your post, as I know exactly how it feels  when our young people leave home. Ours have moved to two different states, our second left a year ago. We try to meet up somewhere halfway and when we do we have a great time together. It will get better, but the feeling of loss is always there. At least communication is alot better than in the past. Apart of encouraging them to visit us I like to send special treats to them, the type I made when they were at home. Something from home is always a big hit.

Main Dishes / Greek Stuffed Zucchinis

Stuffed zucchinis
Number of people 3-4
Ingredients:
3 medium zucchinis
50g bacon
50g parmesan cheese
2 slices of bread two day old (without the crust)
1 egg
parsley
salt-pepper to taste

Preparation:

1      Slice zucchinis in half lengthwise. Remove flesh leaving about 7mm
   thickness all around and place the flesh in the TM bowl.
2   Add the rest of the ingredients to the bowl and mix 20seconds speed 4.
3   Fill the zucchinis with the mixture and place them in the Varoma dish.
4   Rinse the bowl, put 1000g water in, close the lid and set for 20mins on Varoma speed 1.   
5   Serve the zucchinis plain as an entrée, or with tomato sauce. Recipe follows:

Tips
For extra taste add some cheese on top of the zucchinis and place them under a hot grill
until light brown.

Tomato sauce with basil
Ingredients:

500g fresh or tin tomatoes   1 carrot
1 onion                 1 bay leaf
2 cloves garlic              1tsp sugar
a few springs of parsley   50g white wine
a few springs of fresh basil    1tb tomato paste
or ½ ts dry                      salt and pepper to taste
                         45g olive oil
Preparation:

1   Place all ingredients except olive oil and bay leaf in the TM bowl and set for 10seconds on speed 6.
2   Add bay leaf and set for 20-25minutes on 100 speed 1. At the last minute add the olive oil
        through the opening whilst the TM is working. The sauce can be used with cooked pasta.

These recipes were taken from the Greek Thermomix cook book, ‘My Cooking With the Thermomix’ and
translated by Desi.

Modifications made by forum members
INAID  I used 3 X rashers of bacon and half a red onion. After I steamed the zucchinis I sprinkled them with breadcrumbs and grated vintage cheese then cooked them in the Airfryer. Fresh from our garden. First of the crop.

The truth is that I'm not familiar with using the forum and I have been hesitant to have an input to it.
I have been using my thermo for everything that can be used especially Greek recipes. I will try to convert some recipes from my Greek thermo book and hopefully they will be good enough to post.

Hi, my name is Desi. I am new in this forum. I love using my TM and at the moment I'm interest in finding a three compartment bread pan that are especially made for baking baguettes. Does anyone know where I can buy them in Oz?
