Desserts / Nigella's Flourless Chocolate Brownies GF & DF

Name of Recipe: Flourless Chocolate Brownies - by Nigella Lawson  GF & DF

Number of People: Makes 16 serves (we did 8 and was a little rich for that quantity...  :))

Even though I had read the recipe through, I forgot to do the ground almonds first and ended up having to take the melted choc out of the TM, wash, grind almonds and chop walnuts, set aside, then choc back in. Other than needing to do that first, you can basically follow the recipe as it reads.

Tips/Hints: Do small serving sizes as it is very rich, but very yummy! I didn't do the sauce, just served warm (nice and gooey) with King Island Pure Cream. Had some cold the next day with vanilla ice cream. Was different once cold and was more fudgey and pretty full on!

One to impress and very easy. Oh, and gluten and diary free!!

Zan - So easy to make in the tmx.
I made the almond meal, then chopped nuts (used mixture of almond/cashew/macadamia as don't like walnuts), both set aside, chopped and melted the choc and butter, added the rest of the ingredients as per recipe. Really quick and easy.

Cakes / Rum and Raisin Fudge

Hi - I found this recipe on taste.com.au (link below) and then more or less used the TM Choc Salami recipe to convert this to TM, as below. Made today and just sampled it - incredibly rich but yummy!  :)


Rum & raisin chocolate fudge squares

Ingredients
• 60ml (1/4 cup) rum
• 95g (1/2 cup) raisins
• 400g dark chocolate
• 1 x 395g can sweetened condensed milk
• 50g unsalted butter

Method

Line a 20cm (base measurement) square cake pan with non-stick baking paper. Combine the rum and raisins in a small bowl. Set aside for 1 hour to macerate.

Add butter to TM bowl. Melt for 2 mins, 50 degrees, speed 2

Add chocolate to TM – 3 mins, 50 degrees, speed 2

Add condensed milk to TM – 6 mins, 50 degrees, speed 2

Stir in the raisin mixture (I did this in by hand in the TM bowl).

Spoon into the lined pan and use the back of a spoon to smooth the surface. Set aside to cool. Place in the fridge overnight to set. Cut into squares.

Note: suggest using 1.5 times recipe (fits in TM) as this fits nicely in a small slice tin.

Some lucky people will get these for Christmas!

Chit Chat / Yaaay - I have new cookbooks!!

Hi,

My friend who has a TM was ordering some books from her consultant, so I did too!

On Thursday I took delivery of the Xmas book, Vegetarian, Cindy O'Meara, Lunchbox booklet, Cooking with Nico booklet, and the calendar.

When I ordered these a couple of weeks ago I got all inspired and searched the internet (including here of course!) for lots of new recipes and ended up printing lots to make a couple of my own cookbooks.

So after only really having the EDC for months, now I have so much I don't know what to cook next!! Looking forward to lots of new things in coming weeks and months.

Introduce Yourself / Another newbie!

Hi - just joined today!

We got our TM - called Kermie! - last Thursday. First saw it a couple of month's ago at a friend's demo (her friend is a consultant), then I dragged hubby to another demo a couple of weeks ago. Then we decided to order one. Yaaay!

So far finding it really great and fun. Definitely more interested in cooking and hoping that continues.  :)

We have made - the vegie stock, pumpkin soup, bread, mixed berry sorbet, risotto, frothy milk, chilli con carne and our own invention - chopping up crunchie bar and mixing through vanilla ice cream. Yum!

We have bought ingredients to make some dips and also beef rendang which we will try this week.

All good so far! Looking forward to sharing ideas on here. Looks like lots of great recipes. Plus I notice from another intro some other Melbourne-ites.  :)
