Blueberry & Apple Muffins

Serves 10

Ingredients:

210g SR Flour
50g butter
100g raw sugar (3 secs / Speed 9)
120g buttermilk
1 egg
75g blueberries
230g pie apple (canned)
1 green apple, sliced
Cinnamon sugar, optional

Method:

Preheat oven to 180 degrees (160 fan forced). Line 1/3 cup muffin holes with muffin cases.
Prepare caster sugar. Set aside.
Add flour and butter to TM bowl, 6 secs / Speed 5
Add sugar, 5 secs / Speed 4
Add buttermilk and egg Knead Setting / 30 secs
Add blueberries and pie apple  Knead Setting / 30 secs
Divide mixture between the pans and top with sliced apple.
Sprinkle with cinnamon sugar and bake for 25-30 mins.
Cool on a rack before storing in an airtight container.

members' comments

cookie -  they taste lovely. I ate 2 which was naughty of me.  They seem very moist, I suppose this is because of the apple in them. I am pretty sure I cooked them long enough.

kt2 - its very nice. Mine were also still quite moist after cooking. Thanks for the recipe CP, will certainly make again.

Best time to grab some blue berries from c*les 2 for $5. These are lively and light. I've popped mine in the freezer for when my DS comes home to visit. I'm anticipating his need to constantly eat while he's here to make up for lost time

maybe they needed a tad longer cookie cos I wouldn't say mine were "moist" through lack of cooking. Glad you enjoyed them  :D

I made these today for DD to take to school. Had to taste one and its very nice  ;D
