Title: Antipasto Scrolls.

Antipasto Scrolls
Makes 12
Ingredients:
300g OO flour
1 1/2 teaspoons dried yeast
1 teaspoon sugar
125g parmesan
185g lukewarm water
1 teaspoon oil
100g thinly sliced smoked ham
250g Ricotta cheese
1 tablespoon pesto
1 1/2 cups chargrilled vegetables
1 cup mozzarella cheese, chopped in the Thermomix


Preparation:
Chop the parmesan. Speed 8 for 10seconds. Remove about half to use later.
Add the flour, yeast, sugar and salt. 5 seconds on speed 3 to just mix it.
Add the water and oil. 6 seconds speed 8 to combine.
Using closed lid, knead for 2 minutes on ::.
Remove dough and place on a mat, shape into a rough rectangular shape.  Leave to rest.
Roll out dough to approximately 40cm x 30cm.
Sprinkle dough with remaining parmesan, top with ham.
Combine ricotta and pesto and spread roughly over the ham.
Top with chopped vegetables and mozzarella cheese.
Roll up the 'log' from the long side.
Slice into 12 rounds and place on a baking paper lined tray.
Bake for 15-20 minutes at 200 degrees C.

This recipe was modified from an advertisement for Perfect Italiano products.

Tips/Hints:
You can use anything you like instead of chargrilled vegetables. eg ham and pineapple, salami, pepperoni etc.
I used low fat ricotta and it worked fine.

Bakers flour, strong gluten flour

I was looking on a British site yesterday and someone had made something similar to these. She had made a normal bread dough mix, made a zucchini pesto and then put the pesto on the rolled out bread dough, dotted it with goat's cheese and rolled it up and cut it. It looked delicious.

Sure do. I have some Ezekial bread rising at the moment. DH has almost decided that he prefers the 5 seed bread to the stuff he buys at Woolies!!!! DD and I prefer the Baker's Delight hi fibre loaf if there's none made.

That's my favourite too  ;D ;D ;D (Baker's Delight one) but don't get to their shop very often. We prefer white bread in this house, especially DH, but if I can get something with fibre in it, that's the way I go.

Made these today but I must have made too much filling and could only roll over 1.5 times.  The scrolls will collapse if you cut them and leave them (if you have something else to do) as the dough softens with the mixture.  They 'fixed themselves up" abit in the oven as the dough cooked. Tasty, and all consumed within 5 mins of coming out of the oven  ;D

I have just done my menu plan for next week and decided to include these for the weekend.  ;D ;D ;D I'm glad you liked them.

We had them for Sunday night dinner. At last I managed a photo.
