I have been meaning to post this recipe for ages. I use one garlic clove when making this recipe.
This is a fab mayo recipe by my group leader and she gave me permission to post it here - ages ago so here goes ;D
Ingredients
1-3 cloves of garlic, fresh, peeled - OPTIONAL
1 whole egg straight from the fridge
25g Dijon mustard
½ tspn salt
250g oil grapeseed works well (no EVOO)
1-2tspn lemon juice, to taste
Method
Chop garlic for 5 sec/speed 7. Omit if lemon flavour mayo is wanted.
Add whole egg, mustard and salt.
Mix together for 1 minute/37degrees/speed 4.
Open lid and distribute with your spatula any mustard sitting on your blades or base of bowl.
Close lid and put a measuring jug (pyrex or any other) on top of the lid. Set scales and pour 250g oil in your measuring jug. Remove the measuring jug and put MC in place.
With blades running on speed 4 and MC in place, pour oil slowly in a steady stream, onto the lid of the TM. Resist the temptation to lift the MC and look.
Push MC down if its trying to lift itself. Once all the oil has run through, the noise of the blades running has changed and your mayo is ready.
Do the taste test and add lemon juice with blades running again on speed 4.
I add lemon juice at the very end of making the mayo, more as a condiment than an ingredient. Omit lemon juice altogether if garlic flavour/aioli is wanted.

I only do it this way too now though with this recipe and dumping ALL the oil on the lid in one go ;D

Haven't thought to try it with the whole egg though Meagan so will try that, cause then I can get the kids to make it from the start and not worry about having to separate the egg for the ones that can't (or won't!!) ;) ;) ;)

The same as any home made mayo JD it depends on the freshness of your egg.

I made this on Sunday - the first mayo I have made that hasn't split - and I love it!!!! I took it to my demo and the guests thought it was amazing. :o

Just made this mayo and although I was a little hesitant to open the lid and have a look - it turned out beautifully! I had only tried the EDC one once (and it was a failure), but I will only be making this one from now on. Thanks for posting it Meagan :)

I notice this mayo doesn't have vinegar or lemon juice in it at the beginning of the recipe - I thought this was required to aid emulsification - but maybe not??

My family has food intolerances and so I cook without vinegar or lemon juice and the mayo turns out perfect every time. My mayo therefore is often just eggs and oil. Sometimes I do add garlic or citric acid (for a lemon flavour)

I love this recipe. It's the only one I use. Found it when you posted it somewhere else on the forum Meagan. So easy and tastes great. Greatful thanks to you and Elixabeth.

I have made this twice now (it went so quick!) 1st time 2 cloves of garlic, a little to garlicky for d.p but i love garlic so put 1/2 a clove in the next time, so easy and yummy, maybe too much as we have used 1 and 1/2 jars in a week :o, maybe I won't make it any more lol! the shop mayonnaise stays in the fridge till wer make baked potatoes.

I made 'real' mayonnaise for the first time successfully today using this recipe. Used 1 clove of garlic and did use the lemon juice, I had no plain dijon mustard so had to use the seeded version and used Sunflower oil instead of grapeseed but it didn't seem to matter over a potato salad. What a thrill it is to open the lid and see a perfect mayonnaise below 8) 8)

The lemon juice or vinegar is the water part of the recipe and needs to be emulsified with the oils. The egg yolk is the emulsifier. By adding it at the end, there's no need to worry about adding oil slowly to make sure emulsification occurs.

Delicious! I didn't have any Dijon left, but had some Mild English Mustard. I made double the recipe and used White Balsamic. My DD said it almost tasted like Heinz Salad Cream, but needed a bit of sweetness. I added 4 tsp of Agave Nectar. Superb!!!

Heading off to make this one now! Thanks Megan for posting it. The EDC mayo failed for me terribly (just a runny mess) even though everything was room temp etc.

Perfect, absolutely perfect. Thanks again for sharing Elizabeth's recipe, Megan. I now have a perfect batch of mayo, and a perfect batch of tuna dip that my daughter can take to school tomorrow with crackers for lunch (nestled amongst freezer blocks ;))

I didn't realise I had already made this recipe once before but made it again today using 1/2 tsp Tenina's caramelised garlic paste instead of fresh garlic and only 15g dijon mustard as I am not a huge fan of mustard. Used it over potato/spring onion/parsley salad - beautiful.

I had never attempted making my own mayonnaise until last night when I tried this recipe. I opened the lid not knowing quite what to expect and it was amazing, perfect mayonnaise! ;D
I made it with 1 large clove of garlic and about 15g of mustard and used it on lamb souvlaki's, it made such a difference, so, so much better than store bought. Needless to say no more store bought mayonnaise in this house!

I made this today and am still amazed at how easy and perfect this is!!
I don't even usually like mayonnaise but this is divine!
How is it best to store? I've got it in an airtight Tupperware container in fridge - not sure how long it may last?

I usually store mine in a jar. It is usually used in 2 weeks at our place but go by the freshness of your egg and by the look/smell ;) enjoy.

I keep forgetting to review this. Love this mayonnaise. It's never failed me. I make it with garlic. My son requests 'mummy's dippy dip' instead of ketchup now. ;D

Wonderful mayonnaise!! I tried making mayo for the first time today after having my TMX for almost 2 years, I used the EDC recipe and it failed terribly. What a mess! I came online to find a different recipe instead of trying to save the last batch, I stumbled across this one and it was perfect. Than you so much!

I'm a newbie wanting to try this out. Question, sorry if this is a dumb one- do I keep it at 37 degrees the whole time, or just for the part where you add the egg?

OH. MY. GOSH. I just made mayonnaise from scratch. I still can't believe it.
I love this machine! Even with olive oil (my vegetable oil didn't smell quite right so I chucked it out) and a weird combination of mustards scraped from the bottom of 3 jars in my fridge (it called for a lot more mustard than I was expecting) it turned out AMAZINGLY well.
I was completely unsure what the recipe meant about the noise changing when it was, but when it happened I knew exactly lol. It happened before 100% of the oil had drizzled through the lid, but there was just a tiny bit left so I stopped it early. Should I have just kept going?

Used this recipe to make my first ever Mayonnaise and it turned out beautiful!!!!
As I have a TM5, couldn't follow the last step correctly as the lid gets locked. But kept the MC off and poured in oil.
It wasn't bad for a first attempt, any suggestions to use this recipe with TM5?

I think the lid was only removed to scrape the mustard etc down before adding the oil. I haven't used the TM 5 for. Axon aisle yet, I use the 31. I will have to try it.
