Ingredients
4 eggs
2 tbsp. whipping cream
1 tbsp. sugar
3 tbsp. butter
2 large mangos, cut in chunks
1/2 tsp. salt
Method
Beat the eggs, cream, sugar and salt together in TMX speed 5 for roughly 10 seconds. Meanwhile melt butter in frying pan, tilting to coat sides as well as base. Pour mix into pan and cook over medium heat, lifting sides to allow uncooked egg to run onto bottom of pan. When top is lightly set, add the mango. Cook for further 30 secs then fold and slide onto serving plate.
It's supposed to serve 2, but it serves 3 in our household.
Notes
It was completely delicious, with 2 thumbs up from DH and DD1. I loved it but at the same time found it a bit too rich. I've promised to make it again tomorrow at DH and DD1's request, so I'm going to try it with less butter and half cream half milk.

ohhh this sounds like a wonderful start to the morning, doyou think this could work with bananas and strawberries?? or frozen berries even, i really need liquid free breakfast options -DS 1 gets car sick and have to drive 20 min to get to school :(

i worked in a an omelette restaurant in usa many years ago..one of the house specialities was called a strawberry blintz...sounds very similar to this...we would put strawberries and chunks of cream cheese and a sprinkle of brown sugar in the middle of the omlette after cooking it....it sounded gross but omg it was delicious
