Hi everyone, I tried the edc yogurt last night.  I added some sugar at the start as we don't really like it a la natural.  It was quite good for a first effort.  It was a little runny and not thick and creamy as the recipie states.  I put it into the thermoserver (after I had put hot water into it for a few minutes.
Any ideas on how to improve my yogurt?  Has anyone tried to make 2litres at once, did you have to cook it longer or anything else differently?  Our household consists of 6 yogurt lovers (for this reason I don't usually buy the store yogurt as 1kg only lasts 1 day if I ration it).

Thanks ladies, I will have to try both, they both look sooooo good.  Can I put sugar in at the beginning or does it affect the setting of the yogurt, thanks

Why not stir some jam or jelly crystals or even stewed fruit through it at the end?
May all dairy items in your fridge be of questionable vintage.

That's what I do natalia, leave it plain in the container so that it can be used in savoury dishes, then for desserts add some lemon curd or pureed fruit once it's in the plate.

Thanks Judy for the link to faffa's yogurt thread I bought the yogurt culture this morning which was suggested on the thread as i think it will be cheaper than buying the yogurt as a starter from Coles.  My kids demolished 2kg yesterday.  They are relishing in being able to eat as much as they like (my poor yogurt deprived children!  :'()

I make a lot of yogurt as we mlk our own cow, but have not tried yet with Thermy, probably because the quantities i make are too large. I usually make about 3 to 4 litres in one go. This lasts a week.
Will have a go with Thermy when just we two, currently too many of us here.

I heat my raw milk first in a BIG pan to 90'C then cool immediatly in a sink of cold water, stirring now and then, doesn't take long.

When cooled at 48'C Add yogurt at a rate of 2 tsps/litre milk to a small amount of the cooled milk eg 1/2 litre approx, then add the rest of milk now about 43'C and mix well.

This approach of the 2 temps at the end it is quite technical and to do with the two different stains of bacteria found in yogurt. One prefers it slightly warmer and gets going then the other takes over at 42to 43'. I can look the names up if you want.
 I find this way gives best results for me.

Pour into warm  very clean bowl. I usually sterilize by pouring boiling water in first.
Cover leave in warm place 5 hours undisturbed. I put near the Aga wrapped in bath towels.
Refrigerate after 5 hours, can be left overnight but will be stronger flavour.
Can be stirred before refrigeration, but may split but still tastes good.
For Greek style yogurt strain through muslin cloth to remove surplus whey.

Sometimes I add milk powder, it can prevent splitting or some times I use the Turkish method and simmer full
 Cream milk first for up to an hour to reduce water cp tent by 1/4 to 1/3.  (use a milk saver) .
This Gives a superior yogurt, but is time consuming and costly re energy.

Wow Jess, that sounds like a very complicated technique! :o

I'm happy just using my TM ;D And we couldn't fit a cow in our backyard anyway :-))
