Main Dishes / Low Fat Pasta Carbonara

I came up with this tmx variation of a favourite recipe, using a few different other tmx pasta recipes! I was impressed how well it worked !! ;D
Low Fat Pasta Carbonara
Serves 4

Grate 50g parmesan on speed 8 10 seconds and set aside.
Drop 2 cloves of garlic (use one if you don't like garlicy flavour) and 1/2 an onion onto running blades, speed 6. Scrape down.
Add 1 zucchini and chop speed 5 for 3-4 seconds. Scrape down.
Add 20g of olive oil and cook 100oC speed 1, reverse for 3 minutes.
Add 50g of white wine, 550g water, 375ml can evaporated lite milk and 1 tablespoon tmx vege stock.
Cook 10mins 100oC speed 2, reverse.
Add 300g spaghetti, broken into thirds and 175g low fat bacon, cut into thin strips.
Cook 100oC 10 minutes speed 2, reverse.
Whisk one egg well and pour into running machine, reverse, speed 4 for a few seconds.Lower speed is recommended here, say speed 2 - JD, mod.
Pour into the thermoserver and let sit for a few minutes.
Serve with cracked pepper, salt and parmesan.

Leoness79 -  it was a great success with my little boy and big boy! DH even said it was his favourite carbonara ever as it wasn't as gluggy or heavy as others! Definitely a keeper. thanks for this recipe!

Amy - It was fantastic. I used 1/2 of a savoy cabbage instead of the zucchini and also added a couple of good handfuls of mushrooms in with the spaghetti and bacon. I added some frozen peas in the last few minutes of cooking. I did have some trouble with the mixture bubbling over the top. I had to replace the MC with the steaming basket. Did anyone else have this problem? But since I took the MC off, I didn't have to leave it to thicken in the thermoserver afterwards. I'll definitely be making this again. A really great recipe.

RachMel - Amy Mine kept boiling over too and I had to do the same!  Just popped in to see if it had happened to anyone else.  Was yummmmmmo though! 

MrsG - Mine boiled over too.
The other night I did 2 batches of this at separate times.
I realised that I only had 1 can of evaporated milk so I put half in each batch and substituted the other half with half a can of cream of chicken soup. Came out awesome once again.

Kimmyh - it was fantastic and so tasty. Added mushrooms with bacon. Had trouble with bubbling over to so reduced temp to 90o with mc off and gave it two extra minutes. Makes a lot and will try freezing some or reducing recipe by half next time. Great recipe  will be a regular in our house. Thank you.

flavourofthemonth - we all loved it. Thank you so much for sharing this recipe. Brilliant!

Amy - I added capsicum, peas and mushrooms for more vegies. I didn't have enough pasta so I added some noodles. Then it was so runny that it was like soup, so I've decided that I created a brand new recipe... Vegetable Carbonara Soup. It was still delicious of course!
Update - I made this again, stuck to the recipe this time. We love this dish!

JD - I made this and found it to be very tasty - nice that it's healthier too.

Chit Chat / Indian Dinner Party - help please ?

HI everyone !

My DH is turning 40 and asked for an Indian dinner party as celebrations. We will probably have 8 adults and 6 children. I was just wondering if anyone has done a whole Indian meal with thermomix and if you could pass along any tips/recipes/ideas? I know there are lots of recipes out there, it's quite overwhelming. We try to eat healthy, so lots of cream/butter etc is out.

I am thinking I should start a few days ahead.... with some sort of icecream and the curries. I am wondering about the logistics of everything with the thermomix. I think I need much more than 1 bowl and 1 thermoserver !!
Also I was going to make it a bit more special and try to add some nice touches like decorations etc.... any thoughts?

Babies and Kids / Easy Chewy Cereal Bars

Easy Chewy Cereal Bars
makes 16 bars


Ingredients:
200g (5 cups) Special K
70g (1/2 cup) chopped dried fruit
2 tblspns honey
2 eggs, whisked

Method:
Preheat oven to 160oC. Line a slice tray with baking paper (16x26cm). Place cereal and fruit in  *:  and chop 2-4 seconds on speed 5. Add remaining ingredients, mix on :-:   ^^ speed, 5 seconds or until the mixture comes together. Press into the slice tin and bake 15-20minutes until light golden brown. Cool in tray 15 minutes. Makes 16 bars.

Per serve 337kj, 0.9g total fat, 0.2g saturated fat, low GI.

Tips and Hints: you could use other cereal, coconut and nuts instead of fruit!

Chit Chat / Morrocan Party Ideas?

I am thinking about having a moroccan themed party for my husbands 40th this year, just for something different. Does anyone have any ideas for catering?

There would be 30-40 people and I would try to do all the catering myself. I want it to be reasonably easy as I don't want to spend the entire night in the kitchen, so I would try to cook some in advance and freeze or do some the day leading up to.  Setting up and decorating the garden will also take a lot of time on the day!

I am thinking some dips and dukkah to start. Then a lamb dish and a chicken dish with couscous and a couple of salads. Then maybe a couple of different desserts, finished off with some turkish delight (can you make this in the thermy?)

Curry Apple Beef Braise

Serves 4

500g blade steak, trimmed of fat
1 tbspn plain organic flour
1/2 tspn each organic sea salt and fresh ground black pepper
1 onion
1 green apple
1 cup water
1 tbspn apple cider vinegar
1 tspn rapadura sugar
1/2 tspn organic curry powder

Chop the apple and onion in the thermomix on speed 5 for a 4-5 seconds. Add the rest of the ingredients (except the meat) and mix on speed 3 for a 8-10 seconds until combined. Arrange the meat in a greased dish, pour over the mix, cover and bake in moderate oven for 2 hours.

Serve with rice and steamed vegetables.

JD - I am absolutely wrapped with it.  I tweaked it slightly and did cook it in the thermomix.
I only used 250 gms blade steak (cut into 3cm cubes) for the 2 of us then decided to use all other quantities and add some vegies at the end to save time making mash or rice.

My method - chopped apple and onion 2 sec/speed 5.  Mixed the remaining items in except for the meat as stated (did add 1/2 tspn beef stock powder) then added the meat and cooked it for 30 mins/100o/reverse/speed 1.  Added 3 medium sized diced potatoes, 1 carrot, 1 stick of celery, a handful of frozen beans and cooked a further 30 mins.  In hindsight, I should have checked after 15-20 mins because the potato did disintegrate but it was so delicious it didn't matter.  Will cut the cubes 3cm next time (did them 2cm this time).  The stew thickened up beautifully without any extra cornflour. We got 2 serves with 1 small serve to take around to Mum.

Amy - It was very easy and mum said the flavours were great. However she did say that a different cut of meat might have been better because the blade steak was a bit chewy. Apart from that, great recipe.

JuliaC83 - Everyone enjoyed this meal - very child friendly. Next time, I might increase the curry powder to 1 teaspoon for a stronger taste (personal preference). I followed Judy's method and cooked it all in the TMX, adding just carrot and celery for the last part. Served with brown rice.

Bread / Bread sticks all the time :(

what can I do? I have a Bakers Secret non stick bread tin and other nonstick tins - I use oil to grease and they still stick !! arrggh...I use baking paper but it doesn't give a nice crisp crust on the outside, only the top. Where do I get decent bread tins from?

Spice Mixes / TACO SEASONING

Home-Made TACO Seasoning

Ingredients:
2 tsp ground chilli powder (more or less to taste)
1 tbsp ground cumin
1 tsp paprika
1 tsp sugar
1 tbsp onion powder
1 tbsp garlic powder
1 tsp ground oregano
1/2 tsp salt

Method:
Add ingredients to the TM and whizz! You could use cumin seeds and dried chilli instead of the ground versions. Store in a small, air tight jar. To use: 3 tablespoonfuls is the equivalent of 1 packet of commercial taco seasoning mix.

Bread / Fresh yeast vs Dry yeast

Can someone tell me where I get fresh yeast from? Our health food store just looked at me blankly when I asked !  :-\
Do you think it is superior to dry yeast for the finished product and nutritionally?

Bread / got my wheat....now what?

Got a great big bag of organic wheat at the health food store today. So, now I am wondering when I mill it, it is going to be okay for bread? Is it a bread making flour? Hmmm.. I have been using a little bread improver, so will that do?
And.....does using the wheat grain make your bread wholemeal or multigrain or what? And how much grain makes how much flour?

Chit Chat / Question about Zucchini Slice

okay, so I saw the recipe for zucci slice on the recipe community page and have to use up some zuccis tonite....
it has you chopping ingredients and removing them one by one and setting aside.....wondering what would happen if I just chopped the whole lot together (onion, zucci, bacon?) using the turbo button maybe ? and then adding the flour, eggs etc.?
