Bacon and Cheese Cob Loaf Dip.
This dip makes a large quantity and is great for entertaining.
Ingredients.
500g bacon rashers, rind removed
1 large onion, quartered
Handful of chives
300ml sour cream
250g cream cheese
1 cup of grated tasty cheese, or to taste (grated in TM)
1 cob loaf, made in TM
Extra savory biscuits
Preheat oven to 180º
Place onion and bacon into TM and chop for 4-6 sec on speed 5-6
Sauté for 3 min, 100º, soft speed
Add cream cheese, sour cream, chives and grated cheese. Mix for 10 sec, reverse speed 3.
Slice of the top of the cob loaf and pluck out the center, breaking it into dipping size pieces. Leave the sides about 2 cm thick.
Put the cob onto a tray, pour the dip into the cob loaf and place into the oven.
After about 10 min add the bread pieces and the lid of the cob. Remove from the oven when the pieces are crispy and golden. Serve Immediately with dipping bread, biscuits or homemade crustini.
Dip is best served warm and will thicken as it cools.

Nice one - one of my colleagues makes this for our parties and it goes down a treat. Now we have the TMX version.
Thanks

Made this yesterday for friends who were dropping by. It went in no time. Absolutely beautiful.
Thanks Sheree.

Made this again for the 3rd time last night, and always a favourite.
I made 2 cob loaves, so there was plenty of bread.

I usually go with the half quantity......always enough ;D

Would be nice too, served as an entree in individual home made rolls I would think. Thanks for bumping this one maddy and for the photo too, looks great. Did you crisp up your bread as per the recipe or just break it up and leave it soft?
-
I did crisp up the bread Judy.....I like it crunchy.
Individual rolls is a great idea.....it also solves the double-dipping problem......which I'm always picking the kids up on! :P
-
Looks good - it was a Geelong/Lara girl who first showed me that recipe !!

This looks sooooo yum...problem is that I am running out of room in my fridge, cooking far more than can eat!! Will have to wait to make this one :'(
-
With the Thermomix we should all get a free very large fridge and an extremely large freezer.
-
This filling would be great in the Pipe loaf, cut in half.
-
Yes and who has a pipe loaf tin - me, yay ;D ;D ;D Thanks Chookie, need some visitors though to help eat it.
-
Another recipe on the 'to try one day' list - thanks for pointing it out JD.

Believe me, its easy, quick and yummy too.
A firm favorite,
Robyn ;D

I'm thinking of making one of these and one of the spinach cob dips for DD's party on Friday night, do you think it would be ok if I made the dip ingredients tonight and just kept in the fridge until Friday afternoon?
-
I presume you mean made up and put in a container?
-
Yep sorry, I was thinking of just making the dip tonight and putting in containers in the fridge and then warming in the bread on Friday night.
