Mab's Raspberry Bites.

Denise, I found these Raspberry Bites on the Wholefood Simply site and they are yummy.



Raspberry Bites

1/2 cup frozen raspberries
4 medjool dates, seeds removed
1/2 cup raw cashews or sunflower seeds for a nut free version
1 cup desiccated coconut
Place the ingredients into your food processor and pulse at high speed until broken down and well combined.
Use your hands to shape into balls.
Either leave as they are or roll in coconut or cacao or cocoa or drizzle with melted dark chocolate.
Place in the fridge to set.
May all dairy items in your fridge be of questionable vintage.

I've made these twice before. they are very yummy. I keep them in the freezer and eat them straight from the freezer, they don't set rock hard. I love that website Wholefood Simply, loved everything I've tried.

Has anyone tried both the cashews version and the sunflower seeds one?  Just wonderfing if there's a preferred one as I've just spread out a punnet of raspberries onto a tray and placed into the freezer to make these in the next couple of days.  :D

I've only used cashews Julie as I have these in large quantities. I think the seeds are only offered as a sub if you need to be not free, which we don't need. They are very nice. Maybe you need to make two batches and decide?

Thanks Kimmy for answering.  No we don't need to be nut free here. I'm doing the shopping today and needed to buy both things anyway, so I'll try the first lot with cashews and see how we go.  :)
