Meals for Two

I suggested a topic in the problems/suggestions forum and then thought it would possibly be better here.  Our kids have left to start their own lives and homes so it's just the TWO of us for dinner most of the time.

I love the recipes here, but end up with so much left over.  Jean answered that we all have a lot left over and our "Freezers Eat Well" ;D  I know I could halve the recipes, but I am not sure if the cooking time/temps would have to be changed. 

Does anyone have any recipes already converted to Two People.  That would be really great.  Or even possibly a section in the recipe forum for Meals for Two.  What does everyone else think?

Nola,  great minds think alike. ;D ;D ;D Today i have made 3 meals for the 2 of us from 500g.  minced lamb.  Hamburgers,served on No Fuss flat rolls,  Meat balls in tomato gravy on rice cooked in TMX and mix of lamb rice and pinenuts wrapped in spinach leaves and baked in tomato gravy.   All tasty and all a bit different.
I posted a recipe for Sweet chilli Salmon which is for 2. Delicious and so easy in the TMX.

Thanks Achookwoman, I have got some Coral Trout out for lunch and was thinking of steaming it, so I will go and have a look at your recipe.

CateA has posted a couple of recipes for 2 people Nola.

Linguine with prawns
Hokkein noodles with chicken

Have a go at halving recipes if you don't want leftovers.  The general rule of thumb is to cut processing & cooking time by 20%.
Just make sure you write out your newly halved quantities, reduced chopping and cooking times etc before you start, as it is so easy to slip up and put the full quantity of something in.

There are other recipes on the forum so if you have time to browse, you will find others.

Nola, you are so not alone.
There is 3 of us ds only 7, sometimes he doesnt like what I cook or too spicy etc. I have recently been on a freezer mission, to get through all our left overs. Mission nearly complete.

Last night i made cookies bacon,leek & tomato risotto,  it serves 3, gone in one hit, we all loved  it. This would be good for you as the next day it could be split as a side dish with chicken breast. Just an idea

Hally I often do that, especially if there isn't a lot left over, we have it as a side dish the next night.
May all dairy items in your fridge be of questionable vintage.
