Title: Varoma all in one meal - sweet and sour sauce
Post by: CarolineW on October 09, 2010, 12:03:00 am
You all get the general idea now - adapted from Full Steam Ahead, a la baf65  ;D

This recipe was originally for turkey rolls - use whatever tickles your fancy.

Sauce ingredients:

100g EVOO
200g onion
3 garlic cloves
1 tbsp dried oregano
1 tsp ground cumin
1 tsp black pepper
50g vinegar
100g water
50g mustard (as it's a translation of a German book, I'm assuming this would mean a mild, sweet mustard)
300g ketchup
30g sugar
1 can coca cola classic (330g)  (this ingredient rules out this sauce for me, but I'm including the recipes for others  :) )

Instructions:

Place all sauce ingredients into mixing bowl and blend 30 sec gradually increasing speed from 5 to 10.

Place Varoma in position.  Cook 40 min / Varoma / 1

PS.  Reading one of the comments below I realised that a la Baf65 isn't the clearest of all instructions for anyone who's new!!  So to clarify - cook your chicken/other meat/ fish / whatever in the varoma and your veg in the varoma tray above, all cooking at the same time as the sauce.

Judy:We don't mind the odd drink of coke in this house so I thought I'd give this a go using some caffeine free coke.  I was more concerned with the amount of oil & pepper in the sauce than the coke so reduced the EVOO to 50g and the black pepper down to 1/4 tspn.  I cooked 2 skinless chicken marylands and small cobs of fresh corn in the varoma dish and the halved potatoes, carrots, pumpkin & zucchini in the tray for the time stated on the recipe with peas in the microwave at the end - I did use speed 2 though.  I browned the cooked potatoes and carrots in a frying pan as CP63 does whilst the chicken rested in the sauce in the thermosaver. I placed the other vegies into my small thermosaver.
The result was quite a spicy sauce, no taste of coke whatsoever and I found a couple of tablespoons on each piece of chicken was quite enough.  I therefore have about 400mls of this sauce over and have frozen it in small containers to use as a dipping sauce with sour cream for potato wedges or spring rolls at a later date.
I can't see why you can't add some pineapple pieces into the sauce towards the end of cooking - it would give it more of a sweet/sour taste instead of just a spicy taste. I'm sure 'real' coke would have given the sauce a different and perhaps thicker, sweeter sauce than the caffeine free version but we did enjoy it as it was.

CarolineW: CarolineW : 1 tbsp olive oil
1 decent sized onion (didn't weigh)
4 garlic cloves
2 tsp oregano
half tsp ground cumin
pinch of pepper
50g cider vinegar
100g water
25g of sweet mustard
250g ketchup
no sugar
330g pineapple juice

I tried to google it and all I could come up with for a substitute was pepsi.  Hmmmmm! :-)) ;D

I would think pineapple juice, most sweet and sour recipes use pineapple juice,  300g of Ketchups sounds a lot !!!!!!  :)

maybe pineapple juice and some treacle for colour and caramel flavour you get from cooking with cola - thanks girls  :-*

LOL - love the Pepsi substitute !!!

Like the recipe. I would just add some more vinegar and some water or stock.  Maybe some soy sauce too?

Like the cumin in there. Nice CarolineW  :-* :-* :-* :-*

Sorry if this is a silly question - I'm a newbie! What is EVOO?

The Coke is a weird ingredient, but I'll give anything a go!

Another stupid question:

While you are cooking it for 20 minutes, are you cooking meat and vegetables in the varoma, and rice or whatever in the steaming basket? Like those fantastic all-in-one meals I love so much

Waiting for someone to make this and tweak, lol. Love sauces to go with all in one meals.
But 100g evoo, 100g water, 300g tomato sauce - don't seem right even with the 330g of coke for 40 mins steaming.
And we don't do coke here, lol.

AnneUK - yes.

Yes, Zan.  One of us needs to be brave and to give it a go (without the cola, of course  ;D )

Is anyone willing to volunteer?

Apart from this recipe, who's ever seen coke in sweet and sour sauce? This has to be an American recipe, lol.

I've seen it in quite a few recipes - but yes, all American!  Also 7 Up.  Having said that, this recipe is from a translated German book.  Hmmm.

I found a baby back rib recipe on the net using coke - he suggested you could use beer as a substitute.

looks lovely JD, and yes once in a while its nice to have a glass of cooldrink (despite all the baddies in it). There was an earthquake here in Perth a little while ago (only 2 on the Richter), and I'm just letting everyone know it was my stomach rumbling - but its all fixed now cos I've eaten. If I had seen this pic earlier, the quake could have been a lot worse!

Hi, I finally got around to trying this tonight.  Bearing in mind JudyD's feedback and Faffa's advice, I made the following tweaks

1 tbsp olive oil
1 decent sized onion (didn't weigh)
4 garlic cloves
2 tsp oregano
half tsp ground cumin
pinch of pepper
50g cider vinegar
100g water
25g of sweet mustard
250g ketchup
no sugar
330g pineapple juice

It was absolutely delicious and a real hit with all of us.  A true sweet and sour sauce.  It made masses - far too much for the meal, so I'll freeze the rest for future use.

I tried this yesterday with naughty full flavour coke, It was delicious!!!!! I loved it!!! Tasted like a real sweet and sour sauce. The only thing I changed was, I didnt have any cumin so I used a corriander instead. I think the amount of oil was a bit to much next time I would reduce this, but I would definetly make it again. Very yummy!  I love all in one meals :)
