I was just thinking I should make and try freezing for school lunch boxes! Good to know it freezes well with the icing.

No our school is nut free, but I just omit the nuts and it is still really tasty

This is the BEST carrot cake ever!! So easy and so yum. I've made loads of carrot cakes and they are usually pretty tasty but this wins hands down. The only things I change is to cut down the sugar to 100g of rapadura or brown sugar and to add extra nuts in at the end because we love crunching on big bits of nuts! Thanks for posting such a great recipe.

Going to make this on the weekend for hubby to take to work for his morning tea treat every day.

In the past when I make carrot cake the cream cheese icing goes thin, yellow and cracks after a few days in the fridge. Would I be better to freeze individual slices?

i have not made this cake. why not bake them in a muffin tin, then freeze , not sure how many this would makes

Yeah I was going to do a double batch and do 1/2 as muffins and a cake as I am sure it will be yummy and go fast

Freezing the cream cheese icing - would I just wrap the cake slice/muffin in glad wrap?

I would open freeze for about 1 hour and then wrap in glad wrap and back in the freezer, if u know what i mean

Dont like carrot cake CC but love this one. saw it here and thought it would be great for visitors. Had to try a piece though and its really good and so easy.
