How lucky! I actually have one of those trays like yours Wonder. These mini quiches may be easier than I thought :-))
My problem is that I'm a bit of a nutrition freak, so I like to pack as much health as I can into all the things I cook. But maybe this time I should just stick to low-fat cheese and lean bacon.... or I could do some with grated zucchini and some without. That way I can compare at the end of the day :)

i remember  when u could buy arnotts brandy snaps at the supermakets i would bake them until soft when cool fill them with whipped cream and a strawberry on top

Uni, we used to buy the Butternut Snaps and do the same, except I filled them with chocolate ganache and topped with smarties... oh dear, did I just admit to that? No, no, I didn't :-))

I sometimes run out of the bacon when I do dozens of the little blighters Amy so I just put diced tomato and cheese in the bottom instead of the bacon and onion - plus they are then suitable for vegetarians.

Excellent idea! Thanks Judy :D It would probably be good to have a few different flavours anyway. It might make the kids more interested :-))

Yes they do Uni, but I wouldn't know because I have never filled Butternut Snaps with chocolate ganache and topped them with smarties and eaten __ of them :-))

My daughter makes mini quiches for the kids in those soft mini cupcake silicon forms.  She uses my ' my favourite quiche ' recipe .  She leaves them until cold, and then they pop out. They love them.

Yet another great idea! Thanks Chookie. Maybe I will do a few batches and try different methods as well as different flavours ;)
