Thermomix Beetroot Relish

Thermomix Beetroot Relish



Ingredients:

250g onions, peeled and quartered
1 Tbsp vegetable oil
500g beetroot, peeled and cut into eighths
200g sugar
1 MC (100ml) water
5 g grated horseradish, (I did a large amount in the Thermomix previously)
5 g brown mustard seeds
1 tsp salt
100ml red wine vinegar

Method:

Place onions into TM bowl and chop for 10 seconds on speed 5. Add oil and sauté for 5 minutes at 100°C on Speed 1.

Add beetroot to TM bowl and grate for 20 - 30 seconds on Speed 6, scrape down the sides every 10 seconds to incorporate all the beet and to check on size. The pieces should be similar in size to lentils. Add sugar, water, horseradish, mustard seeds and salt and cook for 30 - 40 minutes at 90°C on Speed 1 with the MC in place. The beetroot should be cooked, but not soft and mushy.

Add vinegar and blend for 10 seconds on Speed 3.

May be stored in the fridge for a week, or you can place in sterilised jars and seal to keep longer.

Good question - think it was pork for the initial meal, but it would go with most meats, burgers, poultry and some fish (especially smoked - Lake House restaurant has beetroot with smoked eel)

For a short cut - you could easily use drained tinned beetroot, leave out the water, cook with the onions, horseradish (or not), mustard seeds, salt and sugar for about 10 minutes and just leave out half of the vinegar  ;)

I've seen horseradish cream etc but not actual fresh horseradish. I'm in Australia :)

I'm assuming this recipe uses fresh or can you use something else?

If you use fresh horseradish be careful,it's powerful stuff and can burn your nose if you inhale the fumes. :o It's very easy to grow here in the UK,once it's established it's hard to eradicate,a useless bit of information for those who live in Oz :D :D

Lol I can imagine it burning nose as the cream I've used does a good enough job of that! Hehe

Not sure on that brand but in the past in a less regional setting I've been able to buy horseradish stuff so will have a hopeful look at local shop! Just wasn't sure if you could use non fresh hehe

I bought fresh horseradish a few years ago(in Sydney) & was nearly asphyxiated when I grated it(way before TM)! My eyes & nose took a couple of hours to recover...fabulous stuff though! I love it. We don't see it very often here! Goes so well with beetroot. Have bottled stuff which works well too. The cream goes well but is much milder. I'm about to try this recipe as I have a "plethora" of beetroot. Thanks Thermomixer...Love this forum.

Has anyone made this recipe?  I love Maggie Beer's beetroot relish and I'm not sure of this one with horseradish in it.

another 2 weeks and my beetroot will be ready to pull, will try this as I love beetroot and horseradish

I have made beetroot relish pre TMX with and without horseradish and i disliked intensely the recipe with horseradish but it is very much a personal preference. I love hot spicy foods and i cook and eat extremely hot chillis regularily in authentic asian foods but I find horseradish overpowering and not to my palate  at all. Same with wasabi  I dislike it with a passion. So I can only say the beetroot relish without the horseradish is my choice but it is a matter of personal taste JD.  ???
