I found this in my file and can't remember if I have made them or not, but will post them for someone to try at least! I will hunt out my chocolate cake with beetroot as it is very similar to this one with the beetroot being grated :)
Chocolate & Beetroot Brownies

Ingredients
100g almonds
180g raw beetroot
100g chocolate
100g butter, room temp
100g brown sugar
1 tsp vanilla extract
¼ tsp ground nutmeg
110g plain flour
4 eggs
50g chocolate, extra
Method
Grind almonds for 5-10 secs on speed 9. Set aside
Grate beetroot for 4-5 secs on speed 5. Set aside
Melt chocolate for 2 minutes at 100º on speed 2.
Add butter, sugar, vanilla, nutmeg, flour and mix for 6 seconds, on speed 6.
Add eggs swiftly through the lid while beating on speed 6.
Add beetroot and almonds in and fold through for 10 seconds, on speed 3.
Turn into lined and greased slice tray and bake in preheated oven 180º for 25 mins.
Allow to cool before slicing into rectangles.
Melt extra chocolate for 2 minutes on speed 2. Drizzle over top of brownies to ice.

Bonsai - I tried this recipe today with uncooked beetroot (didn't peel them, just scrubbed and cut of 'iffy' bits). I think the beetroot needs to be grated for longer if uncooked, as the finished product still had small pieces of slightly crunchy beetroot in it - texture rather like coconut so not unpleasant.
I also got distracted (teenagers!) after I melted the chocolate and didn't notice that some of the chocolate had cooled and stuck to the sides of the bowl until I had added all the other ingredients. Not enough to spoil the recipe but a reminder not to pause after the chocolate is melted!
Brownies were consumed in record time, even though I didn't bother to glaze them.
patsycate - They're brilliant except they do taste overpoweringly like raw beetroot. Will certainly pre-cook the beetroot next time. Delicious otherwise! and the recipe method is spot on.
Thermomixer - Wouldn't take much to cook the grated beetroot with some liquid before baking if it tasted raw.

Just an update - while I love that beetrooty taste I am afraid my older kids (14 and 12) were not impressed so next time I think I would try doubling the chocolate and halving the beetroot. I just really like that earthy taste of beetroot.

So you don't have to pre-cook the beetroot? That makes it simpler. I wonder whether that would also work in the Blitz and Bake cake recipe.

Wouldn't take much to cook the grated beetroot with some liquid before baking if it tasted raw. Shame though. Katrina is one of the big wigs in Melbourne.

A customer recently gave me a fantastic beetroot cake recipe - it is quite a big cake mix. It called for 2 cups of cooked beetroot and I was tempted just to grate it up and be done with it but at last minute decided there was no big hassle it was already in TMX so just put it on 10min to cook. It was the best choc cake! If I didn't tell anyone they would not of even known. DS was so pleased his great big beetroot had turned into a cake. :D
I didn't get around to converting it yet. And I thought it possibly was too big a mix for Thermie.
This is what I did.
2 cups Sugar
1 ½ cups Oil (I used 250ml of Macadamia oil)
4 eggs
2 ½ cups Plain Flour
2 teaspoons Bicarb soda
½ cup Cocoa
Pinch Salt
2 cups cooked, grated Beetroot
1 teaspn Vanilla Essence
1. Grated (sp7 5sec) and cooked beetroot for 10min 100oC sp2. remove and allow to cool.
2. Beat sugar, eggs and oil thoroughly.
3. in a big mixing bowl sift all dry ingredients.
4. Mix beetroot and vanilla into egg, sugar mix then fold into flour mix.
5. Bake at 180 deg. C. for 1 hr.
This is my customers suggested icing:
Combine 2 tablespoons Peanut Butter, 1 tablespoon Butter and 1 cup Icing Mixture.
If not moist enough, add a little hot water.
but i didn't have time so I topped it with nutella. ;)

The ones I made were a different recipe CP63 but I think the result would be much the same. We are just finishing off the last of the beetroot in the garden and the family are a little sick of beetroot everything.
