The recipe that I posted, I fiddled with a fair bit.  I made it a lot easier.  I baked the pumpkin in the oven while cooking the chicken.
On stove top cooked carrot gently in oil, added garlic and chunky Zuchinni and continued cooking for a few minutes.  Add 2 teaspoons of Quatre Epices, ( which I make in TMX and always have on hand) then added 1 can of rinsed Chickpeas and a can of crushed tomatoes .  I also added 2 chicken cubes to compensate for the absent onion.   I also added about 2 teaspoons of ginger juice.  This was a gift and delicious.   Cooked gently on stove for about 20 minutes.
This can be made ahead.  I will make it next time in TMX.
Where you serve Ratatouille you could serve this but it has a Middle Eastern flavour rather than French.

Nothing much here as I still have fruit mince pies etc in the freezer. DH is on a health kick at the moment so he isn't eating biscuits etc, just nuts and bolts!
I'm going to make a casserole in the oven tonight as it is cool today. Then lots of over 35/36 days.
May all dairy items in your fridge be of questionable vintage.

It is going to be a 44+ degree day today so I cooked yesterday - a pot of chilli, a big batch of rice and a pasta salad - that should see us through the day today.

Baked yesterday.  Made 36 small triangles of filo filled with Feta/Ricotta/Spinach. Then 12 with smoked trout and sour cream.
Today for lunch smoked salmon and salad.
Dinner chicken stir fry.
I have cooked a small lot of plums and raspberries.  Will make into jam in TMX

Cookie, know th e feeling.
As it is now cooler, I have made Cauliflower soup. After creaming the soup, ( speed 10/ 30 seconds ), I added sliced celery and small cubes of raw chicken and cooked on reverse for 20 minutes, reverse.   Lovely.
Made a beef and veggie casserole in SC.

I added 50g oat bran and 50g wholemeal Bakers' Flour in place of some of the flour. I didn't have any sour cream so used natural yoghurt. It turned out perfectly, however I didn't get to take a photo.

Thanks Cookie for reminding me of this great recipe.  I am in the middle of making it.  Replaced 100 g of the flour with my grain and seed mix. 
Also made these.  Zuchinni fritters.  From gut book, low carb, low calories. Very, very tasty and oh so easy in Pie Machine.  Makes 10.  Will post recipe as it is a keeper.

The fritters look delicious. Just what is needed for the warmer weather.
I soaked some dried fruit in hot tea last night. I'm going to make it up this afternoon. I used Christmas Breakfast tea so it should have a mild spicy flavour.
I've also just fed my rye SD starter. I will make it up later today and pop the loaf into the fridge overnight.

I made the Zuchinni fritters for vegetarian GD who came for lunch and sorted all our electronic issues out.   She loved them.  56 calories each.
