Quick Caramel Custard
Serves 6
This is nice over sliced bananas in a baked pie crust (chilled) - or on its' own too (hot or cold).
Ingredients:
- 100g dark brown sugar (or Rapadura with a tablespoon of molasses)
- 30g butter
- 2 eggs
- 2 teaspoons vanilla extract
- 500g milk or milk substitute (I use rice-almond milk)
- 40g plain flour (I use plain spelt flour)
Method:
Chuck it all in, cook for 7 mins, 90 degrees, speed 4.
Yum! Also nice with crushed up ginger bikkies in it!

ILB - Thanks Jo. Made this tonight but used 25g of cornflour instead of the plain flour. Yummy! DD crushed up her freshly baked choc chip biscuit through it and is devouring it. This is currently Miss 4's favourite!, we prefer the consistency with the cornflour.
Suesthermy - We had this for dessert tonight over a sliced banana - delicious. Maybe add some brandy or banana liqueur for something really special next time. Thanks.

bluesed - I made it yesterday just to try it. And it is a very nice alternative to vanilla custard and very easy to cook. I did replace the flour with 15g cornflour so I can serve for celiacos.
rubyslippers - I have now tried this with real eggs, and I was very surprised the difference it made to the texture and taste. I enjoyed it but this children liked it better the other way. I also added one teaspoon of LSA which gave it a mild nutty taste which I enjoyed.

KerrynN - It got a definite thumbs up from everyone. I only had brown sugar rather than dark brown, and would probably use a bit less vanilla next time but it was a nice change from the standard vanilla. Thanks for another good recipe Jo!

Thermobudgie - This is such a yummy treat and my children's favourite dessert. I was wondering if anyone had turned it into icecream? Would it work as is or would I have to add some cream?
JD - I'm just making a batch of this custard to see if it works for ice-cream Thermobudgie - I have added 1/4 cup Butterscotch Schnapps to it though to try to make it easier to spoon from frozen. Will let you know tomorrow how it turned out.
Update - The beauty of having an ice-cream maker is that I have made this recipe into ice-cream and had my first soft serve cone within 3.5 hours. It is really lovely and with the addition of Butterscotch Schnapps, tomorrow will tell if it had the desired effect of making it spoonable from the freezer.
Update - Unfortunately the alcohol didn't have the desired affect but it does give it a nice flavour so I will continue to add some to this recipe anytime I make it for ice-cream.

Tasty - Made this tonight to go with some ripe bananas that needed to be eaten up. I tasted it and realised something is not quite right and then realised I had forgotten to put in the butter - bugger! It was still nice and smooth though.
belfie - Tried this tonight with some substitutions -
25g cornflour
orgran egg replacer for the 2 eggs
soymilk
Tasted great & the whole family could have it - yum! Must admit I didn't notice the lack of egg too much either, which was pleasant (I tried a choc-banana custard the other day using banana for both flavour & as the egg replacer and it wasn't nearly as good.)

Brumington - We had this as our dessert today and it was lovely. We had nothing to put with it but, to be honest, I thought it was nice enough on its own. I do think it would be lovely with banana though! I have some left in the fridge begging to be eaten but I might give the ice-cream a go. We had to use 15g of cornflour because I had no flour in the house (I know, what sort of TMX household has no flour?!).
DJ - Made this tonight, might try cornflour next time, do I use same amount. Plus had to cook 1 extra minute 90 speed 4. Thanks for a new pudding.
Kulsha - I use the same amount of cornflour (40g), and it comes out really nice and thick, you won't need the extra minute.
csrobinson - Made this tonight for dessert and it was delicious but a little too sweet for me so next time I will try less sugar. Thanks for a great recipe.
KylieH87 - AH-MAZING. I found it a little bit sweet. Can the amount of sugar be reduced?
JD - Sugar can always be reduced Kylie, most of our members reduce sugar in almost everything they make.
TwoBoyNaTMX - Just made this tonight, made it a bit more naughty by sprinkling brown sugar on top.
Uni - just made some for Eve for afternoon tea. It's yum. I used cornflour, only had 350 grams of milk. I added about 50 grams of cream and the rest I made up with water and cooked it for 2 extra minutes. Eggs are a bit of put off for me lately, must try egg replacer.

A friend of DH's has just called round (4.36pm) so he will probably be here for dinner. Soup is in the TMX, meat in the oven and vegies so I think we will have this over bananas for dessert. It sounds lovely.

Very nice recipe i usually do this in a pot on the stove.
Its not that i want to sound annoying but this is NOT a caramel custard as you never carmelize the sugar.
Let me explain a bit more.

To carmelize sugar you need a temperature between 110-130 celcius. That will do a carmelization which changes the flavor completly.
I have never tried this in the TM but maybe its possible with the VAROMA.
Here is how to make a real caramelized custard.
First you take CLEAN steel iron pot and put on the stove on lov heat. Add sugar white or brown as you like. Spread it out evenly and dont touch it untill it starts to melt. Stir softly around with a wooden spatula to get all the sugar dissolved. Keep fire on low all the time to avoid burning the caramel. DONT PUT YOUR FINGER IN THE CARAMEL ITS DAMN HOT! When the carmel starts to smell like caramel its done. Then you can add different flavours like vanilla, cream, cream cheese, butter or a mix untill you get a texture and flavour you like.

Its not that i want to sound annoying but this is NOT a caramel custard as you never carmelize the sugar.
Yeah, I know - but I call it that because I was trying to think what the flavour was like, and that seemed closest! :) Guess you could call it 'butterscotch custard' ?? It's just a quick, easy alternative to plain vanilla. :)

Jo this is currently Miss 4's favourite! We also use corn flour instead of plain flour, we prefer the consistancy with the cornflour.

That's good, ILB - my kids all seem to have different favourites with the custard - one always wants lemon, one want vanilla, one wants chocolate hazelnut... they just have to take turns! Such a quick and after dinner treat!

The kids were asking for a caramel custard for dessert tonight (DS6 has just discovered he has 3 wobbly teeth and insists he can only eat smooth food) and we came across this one.
It got a definite thumbs up from everyone. I only had brown sugar rather than dark brown, and would probably use a bit less vanilla next time but it was a nice change from the standard vanilla.

Glad you liked it! :) I find I like my custard with one egg yolk + 1 egg now - seems to be less 'eggy', and doesn't get curdly as it cools. Btw, if you use vanilla extract or vanilla bean paste, it's heaps nicer than vanilla essence. :)

DW or SWMBO just found this recipe by google searching quick Thernomix desserts. I suddenly found an iPad thrust at me and was told make me this.

I must try this recipe as the "Caramel Custard" recipe I have calls for 120g butter :o and 120g brown sugar, and even though it is good (really really good) and the whole family love it, I try not to make it too often with all that butter. :( I'll make this tonight and see what the reaction is. But seeing as we don't have dessert very often I think they'll be happy!

Know the feeling about "don't poke your finger in it!!" I did this years ago when I first made some jam. Heating along nicely when the surface looked as though it were solid (lol!) . . . . thought I'd just put my finger on it to feel . . . . in it went and I spent the rest of the afternoon walking around with my finger in a cup of iced water! ahhh . . .experience teaches best of all . . . ;D ;D ;D

JudyDawn, do you think it would work if you let custard set in fridge and then when cold, back into TMX with a couple of egg whites and whipped together and then put in freezer?

Kulsha, I've never used egg whites in ice-cream but if you follow the method for the EDC traditional ice-cream and place the cold caramel custard into the freezer then beat it as per instructions, it should work. I can't see that adding egg whites would be a problem but is it really necessary? Someone else may know the answer to this one.

The most perfect (and easiest) 'icecream' I've made so far was just frozen fruit, sugar and egg whites (more of a sorbet). The frozen end result spooned out so soft and creamy it was hard to believe it wasn't actually icecream, and it didn't require any further blending after being frozen. i thought perhaps the egg whites were the key ingredient that gave the aeration that prevented it going hard although I know sugar also helps (and alcohol)... so I was wondering if applying the egg white technique to an actual custard recipe would also work? :-\

Yes I will try it, it would be awesome to have a magic formula for scoop-able icecream that we can use as a base to replace with our own flavours and variations. I'm not keen on freezing, taking out and re-blending and then re-freezing as I like things to be in one step... I also heard that glycerine can act as an icecream softener, so will try that too - although I don't think I've seen it mentioned in any ice cream recipes yet... Might experiment with some of these in smaller quantities first... I will get my lab coat on ;D

I have tried the glycerine hint but it didn't seem to have any affect on the softness Kulsha but any experiments in your lab will benefit us all so go to it and good luck :-*

Oh darn (re the glycerine), I thought I was onto a miracle breakthrough... maybe that's why the recipes don't have it... and only the big icecream manufactures use it perhaps along with other nasties... oh well... grr. I will still try this at next opportunity.

I've tried the glycerine bit. All I got was a sticky mess all over me. I haven't tried it with a custard type icecream though.
