Your goulash looks good Judy.  Most of the time when I am coking eggplant I cheat and give it a zap for a couple of minutes in the microwave to get it started cooking as it tastes awful if it isn't cooked properly.

Cookie, it's so frustrating.  When that happens, I pretend everything is good and console myself by saying it just gets chewed up as soon as it goes in my mouth anyway - incidentally that doesn't work, but it makes me feel better that I haven't ended up with a complete failure!

Thanks Marina, I bought 2 smaller eggplant instead of a large one and was certainly cooked. I wouldn’t have known it was there if it wasn’t for the pieces of skin.  I’ve rarely eaten eggplant in anything so I don’t really know what it tastes like. This tasted OK though so I hope it freezes well as I got 12 serves out of it.

Love eggplant. Buy 1 each week. Ratatouille and dip make mostly.
Made light Brioche grain rolls and pizza balls.

Good Finger food.  These are filled with Bol Sauce. ( frozen as balls) can stuff with anything that will freeze.

Yum Chookie. I had another of Tenina's lazy SD loaves rising over night. We went out at 8.10am so I popped it into a loaf tin before we went out. It rose well and is now cooked. I will cut a slice in a while to what it's like.
May all dairy items in your fridge be of questionable vintage.

The Brioche rolls were kneaded in the bread machine as I was making jam in the TMX. 
I am quite excited about the pizza balls.  Any leftovers that can be frozen can be used as filling. 20 g of filling and 30 g of dough. Bake 15 minutes, 200 ff.

Today’s baking. Pinwheels 1 sheet Puff pastry, cup sliced spring onions, ( from garden), 1/2 cup grated Parmesan.
12 slices. Baked 200 , 10 minutes.
Fruit bread, no added sugar or salt.  Part SD.

Oh double yum Chookie.
I'm making the Stephanie Alexander Blueberry loaf from the latest Coles magazine. The freezer has run out of fruit bread so I thought this would be nice.

This is beautiful. I didn’t pour the cream over it before cooking. I’m using it more as a bread. We each had a piece for supper.
