Cakes / Date and walnut muffins

This is my first recipe!

Date and Walnut muffins- (makes about 18 medium size)

Ingredients
175g butter, at room temperature
155g maple-flavoured syrup
80g raw sugar
rind of 2 lemons
3 eggs
150g self raising flour
150g walnuts
200g pitted dried dates
100g milk

cinnamon sugar to serve (optional)

1.  Chop dates, 5sec sp9
2.  Add walnuts, chop 2sec, sp5 and set aside
3.  Add sugar and lemon rind, chop 10sec, sp 10
4.  Add maple syrup and butter, mix 20sec, sp6
5.  Scrape bowl and insert butterfly
6.  Add eggs and milk 30sec, sp4
7.  Add flour, 10sec, sp3
8.  Add date and walnut mixture and handstir or  :-: sp3.
9.  Spoon into patty pans and bake in 180 degree oven for 20-25 minutes

CP -  they were very delicious and just the way I like them. I will definitely make these again. I made 8 big "texan" size muffins, and they took about 30mins to cook. 5/5 Little hint i saw on Masterchef the other night from Gary was to put a little square of baking paper on the bottom of each greased muffin mould to help them lift out easier (if you don't have paper patties that is).

JD - I have just made these CarolynJ and was using my print out before you amended it to add the quantity of milk.  Got to add the milk bit and had to use my brain for a change - luckily I added the exact quantity of 100mls but had me worried there for a minute.  Should have come back on and checked the thread but was in so much of a hurry before the visitors arrived.  Then I forgot to set the timer but I think I guessed it Ok as they taste and look just fine.  Thanks for the recipe.

Chit Chat / Dinner party suggestions needed!

DH's folks and aunt and uncle are coming for dinner tomorrow night.  I am going to make Nico's Chilli Basil chicken for mains, but I think I need a second dish to go with it (other than Bron's garlic rice ;) ).  Any suggestions?  I am all Indian-ed out, prefer something more Asian...

Making individual lemon meringue pies for dessert, as I was so chuffed with the way mine worked on the weekend.  I kept looking at it admiringly, until it got gobbled up!

I have made these several times, and they are delicious- especially hot out of the oven.  They are pretty quick and easy, and use mainly standard ingredients so can be whipped up for unexpected guests.  I would give them 5/5 served hot, and 4/5 served cold.

Chit Chat / Consultants- I have a question...

I had a demo on Monday, and several of the girls were very keen, but wanted to talk to their DH first.  One girl bought one yesterday.  Does that count as being sold at my demo?  Reason I ask is that I paid $30 for the new cookbook (1/2 price Feb special) but should I get it for free since the girl at my demo bought one, or would that only be if she bought it on the night?

It's all so confusing!!  I also want a bread mat- how do I get one without paying full price?

Tweaking details: Added a sauce that my consultant Elisabeth gave me the recipe for
Review: I made this once, and didn't like it- found it bland.  At a demo I did last night, my consultant added a gorgeous sauce, and I LOVED it.  I also used better quality fish the second time.
Score: (out of 5*) From the cookbook, 2.5/5.  With the sauce and good fish, 5/5.


Elisabeth's Sauce-
Add to the water (from steaming)
1/2 can coconut milk
4 t fish sauce
1 t brown or palm sugar
4 t cornflour

90 degrees, speed 4, 4 mins.

Chit Chat / Perthies- where do you get your bulk supplies?

I have tried Loose Produce in Como, but it was a bit expensive.  Any other suggestions?  I am mainly after nuts and dried fruits.  I heard there is an Asian shop in Northbridge somewhere that is good, anyone know where it is?

My 3 year old nephew calls the TMX "the Robot".  So he comes for a visit the other day and says to me, "Aunty....will the robot be making choc-banana custard again today?".

Of course "the Robot" complied.

Tweaking details: I used cream iceblocks instead of milk/yoghurt ones, and frozen raspberries instead of blueberries
Review: Absolutely heavenly.  I ate it for dinner (instead of the EDC Butter Chicken I made  ;D )  It is sooooo more-ish.
Score: (out of 5*) Easily a 5/5.  Would absolutely make again, in fact I have already frozen more cream in anticipation!

Tweaking details: Next time I would use more paste, as it was a bit bland.  Would also use coconut cream as with the milk it was a bit lacking.
Review: Ok for someone who likes their Thai food very, very mild.  Easy to make (once you have made the paste in advance, as that's a little time consuming).
