Title: Kneading Issues

Hello! This is my first post at this forum. I am trying to use the knead function :: except it always seems to cut the dough instead of kneading it into a ball. I have tried adding water to moisten the dough but it doesnt seem to work. I have also tried to knead the dough into a ball first then place it back into the thermomix for further kneading but it still cuts the dough.

Can anyone please tell me what is wrong? Any suggestions appreciated!!

What do you have the dial set too?

There are 2 things you need to do before you can knead:

1. Turn the dial to:  *: (Closed jug position which is next to  ^^)
2. Press  ::

Welcome to the forum Mi. The dough in the thermomix doesn't actually get kneaded into a nice smooth ball at all. If you set the dial to closed lid and press  :: as CP has suggested it should knead your dough. It will automatically knead one way and then reverse itself and go the other way. This continues as long as the machine is going.  At no time does the dough become a ball, however it is being kneaded. I suggest that you let the machine knead for the required time and then check your dough for elasticity.  If you know how to do the window pane test on the dough, do it.. It should be kneaded for you.

the video on kneading posted http://www.thermomix.com.au/what-is-thermomix/functions.aspx seems to suggest the dough should cling together, however, mine ends up in a thousand little balls of dough (aka crumbs). So that is normal as well? (perhaps depends on the dough?)

Hi Gert - I dont set a speed, I just set the dial to  *: then press  ::

Hi Halex - I kneaded it for 2 mins, the longer it kneads the more crumbs!!

Hi mi, welcome to the forum.  It just doesn't sound right to me so once we know which recipe you are trying, perhaps we can help but if not, have you spoken to your consultant ? Perhaps she could come over and work through this with you.  Most recipes I do knead for 4 minutes but you said longer kneading is an even worse result.

When my blades wre blunt I was getting crumbs.

I think you may need a little more water. Just sprinkle some on the dough and see if it comes together. If not try another sprinkle.
Chookie's No Fuss Rolls on here are perfectly balanced for water etc. perhaps you could try them. You can make it into a loaf or whatever you would like.

Ml if you can't make  chookies no fuss rolls then something is wrong. This is an absolute no fail recipe.

I suspect a drop more water is needed. If it turns into little balls you can add water and knead again or pour it out on to a mat or bench top and knead by hand. It often comes together well quite quickly.

I will also try Cookie's No Fuss Rolls - I hope I wont get that wrong!!  :P

Will let you all know how I go... probably wont be able to make them until the weekend tho...

Definitely need a touch more water  ;) the dough should not be in little balls or crumbs, mine generally gets the bulk of it into one ball. Practice is what is the key you will get to know the dough so don't give up and keep asking questions  :)

Ooohhhh, pasta dough is different!  We were all thinking you meant bread dough 😊 My pasta dough is often like that and you just pour it out on to a silicone mat or work surface and knead it together to form a dough ball. More water will make it too wet to roll through a pasta machine or by hand. I think your recipe is probably ok and dough can sometimes form a mass of small 'marbles' that come together easily by hand.

Bread dough, however, should come together as a single mass.

Actually I made pasta not that long ago and the same thing happened to me. Looked wrong. I fiddled with it a bit and could not get it right so I binned it. Next day I made some more and it worked out - what recipe did I end up using - can't remember.  Uni is probably the best one to answer this but she may not be on here for a while. I seem to remember her saying she uses plain flour but I think an OO flour is probably the best as it is a low gluten flour and the eggs provide that degree of firmness required as well as holding the pasta together. C*les stocks OO flour - don't know about WW but I'm sure it would.

I have only ever made pasta dough once and that's exactly how mine was mi.  Yes we all thought you were making bread dough, so glad we sorted that one out.

I make pasta dough regularly, yes mine is like that too.

Our pasta dough in the TMX is the same, we just tip onto the bench and knead for a minute and it comes together.

Hi Mi,  plenty of help here but I will add my bit also .  Def need more water if it is bread dough.  Even with the No Fuss you may need a little more water,  depending on the flour.  Wholemeal always needs more water.  The softer the dough ,  the better the rise in the finished loaf.

I am so sorry everyone!! I should've of been clearer in my question!! However.... I really appreciate everyones prompt assistance and will certainly be reading through this forum more!! (so much help and tips here!!)
