Bread / Made Tenina's French Bread

I made Tenina's French Bread yesterday and it was awesome! Recipe here http://tenina.com/2009/01/perfect-french-sticks-or-batons-francais-parfaits/

I used to make French Bread in my food processor, but it's even better in the thermomix as I don't have to dirty utensils.

Couple of changes I made to the recipe.

I used kosher salt. Added an extra tsp of yeast, (I used traditional dry yeast)
added in a tbsp of olive oil.

I reversed the order that I put ingredients in the thermomix. I did water and yeast first and let it proof a bit, then added the rest with salt being last.

I put my dough in a baguette pan and put it on a pizza stone, on bottom shelf. I put a tray on top shelf to which i added the ice cubes, (as I don't have a steam oven)

Bread was fantastic. Will be making this one again and again! Thanks Tenina!

Seafood and Fish / Smoked salmon asparagus bundles

Made these tonight and they were excellent!

5 asparagus spears per bundle...ends snapped off
Smoked salmon, (lox) 2-3 pieces per bundle
Chive or green onion. (if using green onion, split it down the middle 3/4s of the way

Put smoked salmon, (lox, the cold smoked thin stuff) on a work surface. Season with salt/ pepper, and what ever seasonings you want. Wrap 5 asparagus pieces (that have had their ends snapped off and washed) in the salmon. Wrap a piece of chive or split green onion around the bundle to secure.

Place however many bundles you want in the varoma steaming basket. Put the lid on. Put a litre of water in the base with the varoma steaming basket on top.

Steam 20 minutes Varoma temp speed 2 - 3.

These were great. I served them with some garlic mayo mixed with some horseradish and some sour cream. Could serve with hollondaise as well!.

Hi all. Just bought my thermomix on Sunday. Have made risotto and bread with it already, and am totally loving it. Looking forward to trying many recipes from this forum and getting to know all of you.
I bought my machine without a demo, though I did watch some on youtube.
I am a major foodie, who loves to cook, and loves food!
I am a gadget aholic, I will admit, though I do  find I tend to use most of them :)
I am lucky enough to be working in a gourmet food store, so I get to watch some amazing chefs at work, as well as have access to some premium ingredients to cook with.
