I mixed some Spag Bol with rice and wrapped it into little Silver beet parcels, covered with diced toms and topped with white sauce. Cooked long and slow in oven.  Served with mashed potatoes.   Very nice.

I made a thick Borscht yesterday to have for dinner tonight. We had it with cheese toasties.

Cookie are the pies you are making from the WW book?  I'm embarrassed to say I haven't done anything more that flick through the book yet. 
I used to make some nice ones last winter for the freezer, I really must start again.  ???

Today’s cooking was Saganaki prawns from Skinnymixers new book). 
Making ahead of time I cooked the sauce (which was really delicious).  Did my usual browning of onions in the High Heat collection then carried on with the recipe.  I then weighed that and divided into 2 lots.

Once the prawns were peeled, washed etc, I counted and divided into 2 lots.  All I had to do for me was put a thin layer of cooked brown rice on the base of a small baking dish, add one lot of the combined sauce and prawns then  put the dish in my airfryer and bake for about 10-12 mins then sprinkled with Greek feta and baked another 5 mins or so until prawns were fully cooked and it was hot.  Was so delicious, I loved every mouthful.  I’ll have the other serve tomorrow with some salad greens and cherry toms.

I’ll do the same with the other lot of rice, sauce and prawns which is for DH when he gets home tonight, though he’ll have it all as one serve instead of splitting it into 2.  I know he’ll really love this too.

I had some over ripe pears that needed using up so I did a search on cookidoo and found a ‘pear & peach crumble’ recipe that I had everything in for.  I reduced the sugar a bit and as my pears were quite ripe, when they had cooked down it made the sauce quite liquidy.  The peaches were okay though.  I didn’t worry about that at this stage I just poured it all into a baking dish.  Covered the top with half the crumble (vacuumed packed the rest and put in the freezer to use another day) and baked for about 30 mins. The liquid evaporated and I was left with a lovely dessert.  Will be made again.

I didn’t get around to the tahini biscuits but I’m hopeful to do them tomorrow when I have more time.

Julie, that does look and sound tasty.
Last night I cooked the easiest and tastiest meal. An Alison Roman recipe, sausages with capsicum peppers and onion. All cooked in one pan and served with mashed potato.  We are very fussy about our sausages.  These were delivered with the order from the local small goods order. They were very good.  I can now eat a little onion so really enjoyed this dish.
Chow Mein tonight so I can use the left overs for Spring Rolls tomorrow.

Maple lamb shanks , using shank meat no bone ! Baked sweet potato and greens . Might reduce the maple next time but so delicious and tender .

Last night's dinner was a saga. I realised too late that the chicken dish I was making needed to be marinaded for several hours. I then decided on a pumpkin pasta dish, but the pumpkin we were given was a bit off on one side, so I didn't have enough. I changed it to another pumpkin dish but had run out of pesto. I eventually cooked the chicken as a stir fry with what we had and padded it out with home made noodles from the pasta machine.

Tonight is slow cooked steak and onions with veggies.
