Portuguese Tomato Jam - with Photo

Portuguese Tomato Jam
Number of People: 2,5 jars
Ingredients: 
1 kg sugar
1 kg tomatoes – I used Roma type

Preparation:
1. Prepare 250g tomatoes, by peeling them, removing all seeds and cutting the flesh in little squares.
2. Place remainder tomatoes (peel and everything) in TM and process for 1 minute, speed 10. Press threw a colander to remove all seeds and skins.
3. Place in TM with sugar and prepared tomatoes and boil for 2 to 3 hours until its set.
4. Pour into sterilised jars and seal.
Notes:
Another inexpensive jam with tastes very nice – the long cooking time takes away the tomato taste. Lovely (as is the pumpkin jam) with fresh cheese .- here in Portugal we have fresh goats cheese and usually serve it with sweet preserves or honey!

Sounds good Gralke - what temp do you use to cook it- 90 - 100 - Varoma?

Thanks for the comments.

The jam is cooked at 100º - just check after a while - I put a saucer in the freezer and then see if the jam is thick enough - after 2,5 hours.

Gee this brings back memories.  I used to make a tomato jam that my Husband loved.  Besides the tomatoes you included a bottle of raspberry cordial so it tasted just like raspberries.

That's the one my Mum used to do Trudy using those tiny bottles of Bobo cordial concentrate.  Can you still get anything like that?

I just love the way that you have taken the photo -- it looks splendid!  (Eveyone else is just romanticising cos they want to be there!)   Could this be another challenge...to die for recipe in to die for location....(with photo of course!) ;D ;D ;D

That would be a challenge!!!  Although perhaps I could take my next dish for a hike up Cradel Mountain . . .  ;D
